White Chocolate & Raisan Cookies
Hai Friends,This recipe is one of the kitchen goddess Nigella Lawson’s  recipe from her cookbook “ Nigella Christmas” .If you want to buy this book you could check here or here. She used dried cranberry in her recipe,I could n’t find that here…So I substituted it with raisins and it worked pretty well. This is completely a easy and cheap cookie recipe..With this amount of ingrediants you could easily get 27-30 cookies..I hope you all will give it a try and let me know what you think..BTW I have posted my cute doggy’s video in my you tube channel…

Ingrediants:

Flour- 150 gms/ 1 1/4 cup
Oats- 90 gms/ 1 cup
Sugar-175 gms / 3/4 cup+2 tblspn
Raisans-75 gms / 1/2 cup
White chocolate-150 gms / 1 cup
Cashew-50 gms / 1/3 cup
Butter-125 gm / 4 ounce / 1/4 pound
Vanilla-1 tsp
Baking powder- 1/2 tsp
Salt a pinch
Egg-1
Method:
Preheat the oven to 180°(360°F).Prepare a tray by lining it with parchment paper and butter it lightly..
Beat butter and sugar in a bowl till creamy.Add in vanilla and beat again..
Throw in the egg and beat well till creamy.
Add in the oats, flour, baking powder, salt and mix well..
Now add in cashews, raisins, white chocolate and mix well.
Scoop a tblspn of dough and arrange it in the tray leaving space between each other because they will expand a lot..
Bake it for 13-15 min.
Remove it from the oven and let it cool for 5 min..Remove the cookies and let it cool in the wire rack completely.
Put them in airtight container and enjoy with a cup of milk..
Pictorial:
One of the Amazing Cookbook..I will highly recommend this one
