I made this with pressure cooker, but you can easily make it in a sauce pan. This taste great with poori or bhatura. Hope you will give this a try and let me know how it turns out for you..
Cooking Time : 30 to 35 mins
Serves : 4
Oil – 2 tblspn
Carom Seeds / Ajwain / Omam – 1/2 tsp
Onion – 1 large chopped finely
Green Chillies – 1 slit
Ginger Garlic Paste – 1 tsp
Tomatoes – 3 large pureed
Potatoes – 2 large peeled and cubed
Chilli Powder – 2 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Salt to taste
Garam Masala Powder – 1 tsp
Amchoor Powder / Dry Mango Powder – 1/2 tsp
Coriander Leaves a handful finely chopped
Heat oil in a pressure cooker, add in some carom seeds and sizzle it for a min.
Add in onions and cook till golden.
Add in green chillies and ginger garlic paste.Saute for a min
Add in tomatoes and cook till oil separates.
Add in salt, chilli powder and turmeric. Mix well.
Add in potatoes and some water. Pressure cook for 3 whistle, simmer for 5 mins, turn off the heat and let the steam go all by itself.
Now open the cooker and add in garam masala powder and amchoor powder. Mix well.
Add in coriander leaves and mix well.

|Take tomatoes in a blender|
|Puree till smooth|
|Chop up some onions finely|
|Cube some potatoes|
|Heat oil in a pressure cooker|
|Add in ajwain / carom seeds / omam|
|Add in onions|
|saute till golden|
|now add in green chillies|
|and ginger garlic paste|
|Saute for a min|
|Add in salt, turmeric and chilli powder|
|saute for a min|
|Add in tomato puree|
|Cook this till oil separates|
|add in potatoes|
|pour in some water|
|pressure cook for 3 whistle, simmer for 5 mins and
turn off the stove
|now the curry is done|
|add in garam masala powder|
|and some amchoor powder|
|add in some chopped coriander leaves or parsley|
|Taste great with puffy poori or bhatura|
