Baingan Masala Recipe / Fried Brinjal Masala Recipe

A easy dish which you can whip up in few minutes. Plus it goes great with curd rice, roti, rasam rice, even with some plain steamed rice..Delicious..I have lots of brinjal recipes in this blog, it is one of my favourite veg..

Preparation Time : 10 mins
Cooking Time : 30 mins
Serves : 3 to 4


Brinjal / Baingan - 1 large
Oil - 2 tblspn + for shallow frying
Mustard Seeds / Kaduku - 1/2 tsp
Cumin Seeds / Jeerakam - 1/2 tsp
Onion - 1 medium chopped finely
Green Chillies - 2 chopped
Ginger Garlic Paste - 1 tsp
Chilli Powder - 1 tsp
Coriander Powder / Malli Podi - 2 tsp
Turmeric Powder / Manjal Podi - 1 tsp
Salt to taste
Tomatoes - 2 chopped finely
Water - around 1 cup


Cut brinjal into thick rounds, now cut each rounds into strips.

Heat oil for shallow frying. Drop brinjal in and fry till golden. Remove and set aside.

Now drain most of the oil from the pan, keep just 2 tblspn in it.

Add in mustard and cumin. let them pop.

Add in onions, chillies and saute till golden.

Add in ginger garlic paste and saute for a min or so.

Add in salt and spice powders and mix well.

Now add in tomatoes and cook for couple of mins, add in a splash of water and cook till tomatoes turn mushy.

Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 mins or so.


Take brinjal

Slice into rounds

Cut each rounds into strips

All done

Heat some oil for shallow frying

Add brinjals in

Fry till golden

Remove it to a plate

Now take your other ingredients

Drain off most of the oil, keep just few spoons

Add in cumin and mustard seeds

add in onions and chillies

saute them

cook till golden

Add in ginger garlic paste

saute for a min or so

Add in chilli, coriander, turmeric and salt

Mix well

Add in chopped tomatoes

Mix well and cook for couple of mins

Add in a splash of water

Cook till the tomatoes turn mushy and the masala is done

Now add another splash of water

mix well

Add in the fried brinjal

mix well and simmer for few more mins

  5. Great dish, very yummy. It's a pity that I was so hungry after work and wanted to do it fast. I should have fried the brinjals for longer, so they would be all brown-gold, like yours. I'll bet it would be even better then.
