    Stuffed Ennai Kathirikkai Kuzhambu

    This is my favourite one, It is so tasty when mixed with some hot rice and ghee. Yum Yum..The freshly roasted spices which are stuffed into the brinjal just goes deep into the silky flesh of the brinjals and make sit lip smacking good.

    Ingredients for Stuffed Ennai Kathirikkai Kuzhambu

    • Brinjal - 10 small variety
    • Onion - 1 large chopped
    • Garlic - 6 cloves peeled
    • Tamarind - a small gooseberry size
    • Chilli Powder - 1 tsp
    • Coriander Powder - 1 tblspn
    • Turmeric Powder / Manjal Podi - 1 tsp
    • Jaggery / Sugar - 1 tblspn
    • Salt to taste
    For Roasting and Grinding: 
    • Dry Red Chilli - 2
    • Coriander Seeds / Malli - 2 tblspn
    • Channa Dal / Kadalai Paruppu - 1.5 tblspn
    • Toor Dal / Tuvaram Paruppu - 1.5 tblspn
    • Coconut - ½ cup grated
    • Salt to taste
    For Seasoning:
    • Oil - 5 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Cumin Seeds / Jeerakam - 1 tsp
    • Dry Red Chilli - 1
    • Urad Dal / Ulundu Paruppu - 1 tsp
    • Asafoetida / Hing / Kaya Podi - ¼ tsp

    How to make Stuffed Ennai Kathirikkai Kuzhambu

    1. Dry roast the ingredients given for roasting till golden, take them in a blender add little salt. and grind them to a fine powder. Set aside.
    2. Take brinjal cut them into four, stuff with the masala.
    3. Heat oil in a pan, add in the seasoning ingredients and let them sizzle.
    4. Now add in onion, garlic and saute them for a min with salt.
    5. Add in the brinjal, chilli powder, coriander powder and turmeric powder. Toss well.
    6. Add in salt and tamarind pulp. In goes leftover masala as well. Add in jaggery and cover with water as needed.
    7. Cover the pot and let it simmer till it thickens and oil floats on top.
    8. Serve.

    Ingredients

    • 10 Brinjal small variety

    • 1 tsp Cumin Seeds / Jeerakam

    Stuffed Ennai Kathirikkai Kuzhambu Recipe step by step pictures

     

    Take all your ingredients
    These are the ingredients for roasting
    Take them in a dry pan

     

    roast them slowly till it turns golden
    let it turn golden
    take it in a blender
    add little salt
    powder them
    take them in a plate
    now take your brinjal 
    use the small variety
    cut them like this
    stuff them
    all done
    Heat oil in a pan
    add in seasoning ingredients
    add in onions and garlic
    some salt
    mix well
    Add in brinjal 
    toss well in the oil
    add in chilli, coriander and turmeric powder
    mix well
    pour in tamarind water
     
    add in the leftover masala
    pour enough water to cover the brinjal
    add in little jaggery
    cover and simmer
    now the brinjal is cooked
