Stuffed Ennai Kathirikkai Kuzhambu Recipe



This is my favourite one, It is so tasty when mixed with some hot rice and ghee. Yum Yum..The freshly roasted spices which are stuffed into the brinjal just goes deep into the silky flesh of the brinjals and make sit lipsmackingly good..

Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serves : 4 to 6

Ingredients:

Brinjal - 10 small variety
Onion - 1 large chopped
Garlic - 6 cloves peeled
Tamarind - a small gooseberry size
Chilli Powder - 1 tsp
Coriander Powder - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Jaggery / Sugar - 1 tblspn
Salt to taste

For Roasting and Grinding:
Dry Red Chilli - 2
Coriander Seeds / Malli - 2 tblspn
Channa Dal / Kadalai Paruppu - 1.5 tblspn
Toor Dal / Tuvaram Paruppu - 1.5 tblspn
Coconut - 1/2 cup grated
Salt to taste

For Seasoning:
Oil - 5 tblspn
Mustard Seeds / Kaduku - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Dry Red Chilli - 1
Urad Dal / Ulundu Paruppu - 1 tsp
Asafoetida / Hing / Kaya Podi - 1/4 tsp

Method:

Dry roast the ingredients given for roasting till golden, take them in a blender add little salt. and grind them to a fine powder. Set aside.

Take brinjal cut them into four, stuff with the masala.

Heat oil in a pan, add in the seasoning ingredients and let them sizzle.

Now add in onion, garlic and saute them for a min with salt.

Add in the brinjal, chilli powder, coriander powder and turmeric powder. Toss well.

Add in salt and tamarind pulp. Add the leftover masala as well. Add in jaggery and cover with water as needed.

Cover the pot and let it simmer till it thickens and oil floats on top.

Serve.

now take your brinjal 

use the small variety

mix well

Add in brinjal 

toss well in the oil

add in chilli, coriander and turmeric powder

mix well

pour in tamarind water



add in the leftover masala

pour enough water to cover the brinjal

add in little jaggery

cover and simmer

now the brinjal is cooked

Serve
