Coconut Sambar Recipe - Thengai Arachuvitta Sambar Recipe - Onam Sadya Recipes



This is a sambar recipe which i make occasionally. It is a kind of different one because of the addition of coconut in this. It taste really really good and this is a kind of thick sambar recipe and goes great with rice, idli, dosa or anything you name it..

Preparation Time : 10 mins
Cooking Time : 40 to 45 mins
Serves : 4

Ingredients:

Toor Dal / Tuvaram Paruppu - 1/2 cup washed
Turmeric Powder / Manjal Podi - 1/2 tsp
Water - 1.5 cup

For Seasoning:
Oil - 1 tblspn
Mustard Seeds / Kaduku -1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Curry leaves a sprig
Asafoetida / Hing / Kaya Podi - 1/2 tsp

For Sambar:
Onions or Shallots - 1 large sliced or 10 peeled
Green Chillies - 2 slit
Tomatoes - 1 large chopped
Potato - 1 peeled and cubed
Carrot - 1 chopped
Beans - 6 chopped
Cucumber- 1small chopped
Ladies Finger / Okra - 5 chopped
Tamarind Pulp - 2 tblspn or to taste
Salt to taste
Sugar or Jaggery - 1 tsp
Coriander Powder / Malli Podi - 2 tblspn
Chilli Powder - 2 tsp
Turmeric Powder / Manjal Podi - 1 tsp
Coconut - 1/2 cup grated and ground with water
Coriander leaves a handful chopped
Water as needed

Method:

Cook dal with turmeric and water till done. Mash well and set aside.

Heat oil in a pan, add all seasoning ingredients and let them sizzle.

Add in onions, chillies and tomatoes mix well.

Add in all the veggies and toss well. Sprinkle little salt and sugar. Mix well.

Add in the spice powders and mix well.

Pour in water, tamarind water and mix well. Cook till the veggies are done. 

Add in dal and coconut mix. Mix well and simmer for few more mins.

Add in coriander leaves and mix well

I cooked some toor dal, just add little turmeric and cook them


mash well
Take coconut in a blender


puree till smooth, set aside


Heat oil in a pan


add in little mustard, urad dal and cumin seeds


add little asafoetida


add in onions and chillies


saute them well


add in tomatoes


cook that for few mins


add in all the veggies..I added potatoes, ladies finger, carrots, cucumbers and beans



toss well
sprinkle little salt and sugar


mix well


add in spice powders


stir that in


keep cooking for few mins


add in water


mix well


add tamarind water


cover and cook till veggies are done


mix well


add in cooked dal


mix well


simmer for few mins


then add in coconut mix


mix well


simmer for few more mins


add a good handful of chopped coriander leaves and mix well

    Whenever we are adding coconut in any food we can't consume it for next day. But how about adding tamarind along with coconut. Can we keep that for 1 or 2 days?
