    What is White Pumpkin ?

    Ash gourd / white pumpkin is a fruit native to parts of Southern Asia. It is also known as Benincasa hispida, winter melon, wax gourd, vellai poosanikai and Chinese watermelon. It grows on a vine and matures into a round or oblong melon similar in size and colour to a watermelon.

    In India, the ash gourd is known by a variety of other names, including komora (Assamese), pethakaddu (Hindi), boodagumbala (Kannada), Kumbalanga (Malayalam), Kohla (Marathi), Thadiyangai (Tamil), and Boodida gummadikaya (Telugu). Petha is a vegetable candy made in North India and Pakistan.

    White Pumpkin Juice Ingredients

    White Pumpkin - The mild flavour of White Pumpkin / Thadiyangai is similar to cucumber, and the fruits flesh is a popular addition to Chinese and Indian dishes. The fruit is said to have numerous health benefits and has been used for centuries in traditional Chinese and Ayurvedic medicine.

    Mint Leaves - Mint primary flavour profile is a subtly sweet taste and cool sensation caused by the herbs menthol content.Lemon juice & salt - add lemon to taste and salt to taste. This enhance the taste.

    Optional - use cucumber, mint leaves or curry leaves to enhance flavour.

    How to Make White Pumpkin Juice (Stepwise Pictures)

    Take it in a blender
    puree till smooth
    Pass through a strainer
    press and extract as much juice as possible
     
    add pinch of salt
    add lemon juice
    mix well
    fill a glass with ice cubes
    pour it in
    enjoy

    Variation (White Pumpkin Mint Juice)

    1)Take white pumpkin, cucumber, ginger.

    2)Add in mint leaves, water in a blender.

    3)Grind into a smooth puree.

    4)and puree till smooth. Strain this.

    5)Add in lemon juice.

    6)Add in salt to taste.

    7)Mix well.

    8)Enjoy.

    Where do white pumpkins come from?

    White pumpkins, which were once extremely rare, were bred as albino breeds by pumpkin growers and scientists. While they differ from orange pumpkins in appearance, they are all cultivars of the squash plant and are not botanically considered separate plants.

    What is contained within a white pumpkin?

    The smooth rind ranges from white to ivory, and the flesh is dense and firm, encasing a central cavity filled with pulp and flat, cream- coloured seeds. Some White pumpkin varieties are edible and have a tender texture with a mild, earthy flavour.

    Ingredients

    White Pumpkin Juice

    • 2 cups White Pumpkin peeled, cubed
    • 2 cup Cucumber peeled, cubed
    • 1 tsp Salt
    • 2 tbsp Lemon Juice
    • 1 cup Water

    White Pumpkin Mint Juice

    • 2 cups White Pumpkin peeled, cubed
    • 1 cup Cucumber peeled, cubed
    • 1 inch Ginger peeled, chopped
    • ½ cup Mint Leaves
    • 1 cup Water
    • 1 tsp Salt to taste
    • 2 tbsp Lemon Juice

    Instructions

    White Pumpkin Juice

    • Take cucumber, white pumpkin, ginger, mint in a blender and puree till smooth.  Strain this, add salt and lemon juice. Fill a cup with ice cubes and pour juice in. Serve.
