My mom makes this whenever she prepares a south indian thali menu. She does that during festivals. parties and functions. This is how her thali looks like. It includes Hot Rice, Avial, Banana Poriyal, Ladysfinger Kichadi, Inchi Pachadi, Cucumber Pachadi, Pumpkin Pachadi (Recipe Soon), Chilli Pachadi ,Mango Pickle, Sambar, Paruppu, Rasam, Thalicha More & Semiya Payasam.Looks like a complete menu right..This is how we enjoy our meals..This recipe is one of that menu. Preparation Time: 10 mins
Cooking Time : 15 mins
Serves – 2
Cucumber – 1 cup chopped into small pieces(You can grate it also)
Salt to taste
Water – 3/4 cup
Yogurt / Curd – 2 tblspn
Coconut – 1/4 cup
Green Chilli – 1
Cumin Seeds / Jeerakam – 1/2 tsp
Oil – 1 tsp
Mustard Seeds / Kaduku – 1/2 tsp
Curry leaves – 5
Take grinding ingredients in a blender, add some water and make into a smooth paste. Set this aside till use.
Now take cucumber in a kadai. Season this with salt. Cover with water and bring that to a boil. Simmer and cover the pot and cook till the cucumber is cooked.
Now add in the ground masala and mix well. Bring that to a boil.
Once it boils. switch off the flame. Now let it cool for 5 mins.
Add curd and mix well.
Now make tempering, by heating oil and crackling in mustard and curry leaves.
Add this tempering over the pachadi and mix well.
Serve with rice.

|Add in the grated coconut masala|
|Once it boils, switch off the flame|
|Add thick curd|
|Crackle in mustard seeds|
|Add in curry leaves|
|Once it splatter|
|Pour over the pachadi|
