About Badam Milk (Badam Doodh)
Badam milk is a popular Indian milk beverage. It is also known as badam doodh, almond milk or badam paal. Badam means almonds, Doodh means milk. It is made with a combination of almonds, cardamom, saffron, sugar and milk. The mixture is boiled till thick and creamy and can be served hot or cold.
This drink is known for its health benefits. Badam milk cools body naturally, increases energy, induces sleep, calms body, mind & soul. It is called as badam doodh in Hindi and badam paal in Tamil.
The procedure for making badam milk is so easy. The first step is to prepare the badam paste. Almonds is soaked in warm water for few minutes to soften the skin. Once soaked badam is rubbed with our fingers to remove the almond skins. These blanched almonds is ground with cardamom to a fine puree. This is cooked with milk to create thick and creamy badam milk.

Badam Milk Ingredients
Whole Milk - I like to use whole milk in this recipe. Full fat milk makes the drink more creamy and delicious. For vegan option you can use nut milk like almond milk, soy milk.
Almonds / Badam - use good quality almonds in this recipe. Soak almonds in hot water for few hours to remove the skins.
Sugar - This totally depends on your taste. You can add more or less as per your taste.
Sweetened Condensed Milk - even though this is optional, I strongly recommend you to add for delicious creamy taste.
Saffron - one of the most essential ingredient in badam milk is saffron. Use the finest quality saffron. Soak saffron in warm water or warm milk for at least 15 minutes prior to release the colour and flavour.
Cardamom - some people don’t prefer cardamom flavour. In that case, you can skip adding cardamom.

How to Make Badam Milk (4 Easy Steps)
Pre-preparation - soak saffron in warm water or milk for 15 minutes. Soak almonds in warm water and let it sit for an hour.
Almond paste - After 1 hour peel the skins off the almonds and take them in a blender along with cardamom and ½ cup of milk. Make them into a smooth puree. Set this aside till use.
Cooking Badam Milk - Take milk in a sauce pan and bring it to a full boil. Add sugar and condensed milk and mix. Now add in badam paste and mix well using a whisk. Cook this for 5 to 10 mins on low flame. Now add in saffron soaked in milk and mix well.
Serving - Pour this into a jug and put it in the fridge or freezer for chill. You can serve badam milk immediately warm or serve cold.
How to Make Badam Milk (Stepwise Pictures)
Soaking Saffron
1)Start by soaking the finest quality saffron threads in warm water or warm milk for at least 10 to 15 minutes. This helps extracting the saffron flavour and colour.
Blanching Almonds
2)Take almonds in a bowl. Use good quality almonds which helps in maximum flavour.
3)Cover the almonds in hot or warm water. If you are using hot water, you can peel the skins after 15 minutes. If you are using warm water, it takes 30 minutes to 1 hour for the skins to soften.
4)Rub the almonds with your fingers to remove the peels.
5)Peeled almonds are ready. Discard the skins. You have to reserve few almonds for garnishing.
Chopped Almonds for Garnishing
6)I took around 5 to 6 almonds and chopped it finely to add it once badam milk is made. This is for texture, you can skip it if you want creamy badam milk.
Making Almond Puree
6)Take the blanched almonds in a blender.
7)Add in few cardamom pods into the blender. If you don't prefer cardamom flavour you can skip it entirely.
8)Add some milk. I used around ½ cup to ¾ cup milk for grinding. You can also use water for grinding.
9)Grind the blanched almonds into a smooth puree. Make sure the almonds is ground into a smooth paste like consistency. Set aside till use.
Boiling Milk with Sugar
10)take milk in a sauce pot or pan. For vegan option check my notes section. Heat milk and bring it to a full boil.
11)Add in sugar to the milk and mix well.
12)Add in sweetened condensed milk into the milk.
13)Mix everything together and bring it to a full boil. Keep mixing and keep cooking.
Adding Badam Paste
14)Once the milk starts to boil, add in the badam paste. Once the badam paste is added, you have to use a whisk to mix it constantly.
15)keep mixing using a whisk and keep cooking on medium high heat till the badam milk thickens.
Making Badam Milk
16)Now add in the saffron mixture and mix well. As soon as you add saffron mix the badam milk will turn beautiful yellow colour.
17)Simmer the pan for 5 more minutes. The longer the milk simmer the darker it gets because of the saffron.
18)Finally add in the chopped badam pieces. You can skip this if you want badam milk to be creamy.
19)Mix well and take it off the heat. As the badam milk cools it gets even thicker.
20)Serve badam milk hot or cold.

Ingredients
- 1 litre Whole Milk
- ½ cup Almonds | Badam
- ½ cup Sugar
- ¼ tsp Saffron
- 4 tsp Cardamom
- 3 tbsp Sweetened Condensed milk (optional)
Instructions
- Take saffron in a bowl, pour 2 tbsp of warm water or milk. Let them steep for few minutes till needed.
- Take badam in a bowl. Pour warm or hot water over the badam and let them soak for 1 hour. After one hour, peel badam and take them in a blender along with cardamom pods and ½ cup of milk. Make them into a smooth puree. Set this aside till use. Reserve few almonds, chop them finely and set aside for garnishing.
- Take milk in a sauce pan and bring it to a full boil. Add in sugar and condensed milk if using and mix well. Mix till sugar melts.
- Now add in badam puree into the milk mix and use a whisk to mix it till combined. Keep whisking and bring it to a full boil. Now reduce the flame and cook for few minutes till thickened.
- Add in saffron water and mix well. Add in finely chopped almonds and mix well. Pour this into a jug and put it in the fridge or freezer for chill. Serve cold.
