    It's been a while since i posted any kuzhambu recipes. SO i made this yesterday and i am sharing it with you. I have posted so many kuzhambu recipes in my blog.

    This is a gravy which i made using green long variety brinjal. This gravy has coconut in it.
     

    Ingredients for Brinjal Coconut Puli kuzhambu

    • Green Long Brinjal - 2 sliced into round
    • Coconut - ½ cup grated
    • Oil - 3 tblspn
    • Mustard seeds / Kaduku - 1 tsp
    • Fenugreek seeds / Vendayam / Methi - ¼ tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Asafoetida / Hing / Kaya podi - a pinch
    • Curry leaves - 2 sprig
    • Onion - 1 medium size chopped
    • Garlic - 10 peeled
    • Chettinad Kuzhambu Masala Powder - 3 tblspn
    • Water as needed
    • Tamarind Pulp - 2 tblspn
    • Salt to taste
    • Sugar - 1 tsp

    How to make Brinjal Coconut Puli kuzhambu

    1. Grind coconut into smooth paste. Set aside
    2. Heat oil in a kadai. Add in mustard, urad dal, fenugreek and curry leaves.
    3. Now add in onions, garlic and saute for a min.
    4. Add in brinjal and saute well.
    5. Add in the masala powder and saute well.
    6. Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.
    7. Add in coconut and mix well. Simmer for 10 mins.
    8. Serve.

    Ingredients
