I was looking for a simple brown bread recipe which I can make faster on day to day basis. This is one such recipe adapted from Jenny can cook. The bread itself is super easy to make, you can make the bread either by hand or in a machine.

This brown bread recipe is made with whole wheat flour, plain flour, yeast, ,milk, sugar, egg and olive oil. Wheat dough is made and shaped into a loaf shape and let to rise and baked.

How to Make Brown Bread Recipe
Pre-preparation
Grease a 8 ½ x 4 ½ x 2 ¾-inch loaf pan with oil. Set aside. Place wheat flour, plain flour, salt in a mixing bowl or the bowl of the stand mixer. Mix well using a spoon until it is briefly mixed. Set aside.
Activating Yeast for Bread
Take warm milk in a bowl, sprinkle over some sugar, yeast and set aside for 5 mins till the yeast blooms.
Making Brown bread dough
Once the yeast has activated, add egg and olive oil and mix well. Pour this over the flour mixture and place the bowl into the stand mixer and let it knead for 2 mins. After 1 min of kneading, sprinkle the remaining ¼ cup of flour and let it go for another 1 min. So it is a total of 2 min of kneading in stand mixer. Don’t over mix. The dough will be little sticky.
Relaxing the Dough
Once the dough comes together, remove it to a work surface, sprinkle little extra flour and knead gently for 20 times. You should get a smooth finished dough by that time. Don’t use too much flour. Now cover it with a kitchen towel and leave it for 10 mins.
Shaping the dough
Take your greased loaf pan as a guide. Spread the dough gently like a rectangle and roll it carefully. Pinch the seams together and place the seam side down in the loaf pan. Cover with a tea towel and let it rise in a warm spot until it’s one inch taller than the pan, about 35 mins to 1 hour. I like to rise it inside my oven with lights on.
Baking Brown Bread
Meanwhile, during the last 10 mins of rising. preheat oven to 375° F (190 degree C).Place the loaf pan gently into the oven and Bake for 30 minutes. After the first 15 minutes, cover the top of the loaf with a foil tent to prevent over-browning.
Cooling Bread
Remove from oven and let it cool in the baking pan for 10 mins, gently invert it over a cooling rack and let it cool for 2 hours. After 2 hours, slice and serve.

Equipment
- 1 Loaf Pan
- Stand Mixer or Mixing Bowl
Ingredients
- 2 cups Whole Wheat Flour (240 grams)
- ½ cup All Purpose flour (60 grams)
- 1 tsp Salt
- 1 Cup Warm Milk (240 ml)
- 2 tbsp Sugar
- 2 tsp Yeast
- 1 large Egg
- 2 tbsp Olive Oil
- ¼ cup All Purpose flour (30 grams Extra)
Instructions
- Grease a 8 ½ x 4 ½ x 2 ¾-inch loaf pan with oil. Set aside.
- Place wheat flour, plain flour, salt in a mixing bowl or the bowl of the stand mixer. Mix well using a spoon until it is briefly mixed. Set aside.
- Take warm milk in a bowl, sprinkle over some sugar, yeast and set aside for 5 mins till the yeast blooms.
- Once the yeast has activated, add egg and olive oil and mix well.

Can I use only wheat flour to make this bread?

What happen when I over knead the bread dough?
Over kneading the dough makes the bread form broken gluten strings and can crack on top. If you are making the bread using a stand mixer then you have to be very careful with overkneading. But making bread using hands has less chance of over kneading.
Can I use butter instead of oil?
Melted butter can be used instead of oil. Olive oil can be substituted with any flavourless oil.

One of the questions which I often get is Why my bread is not rising. Why my dough is not doubling up. Why my bread is dense.
How to Activate Yeast
- Take warm water in a bowl. Use Luke warm water. Dip your finger in the water and it should be very warm. Just like a warm bath water.
- sprinkle little sweetness like sugar, honey. Because yeast loves warm and sweet environment.
- now sprinkle yeast over it. I use dry yeast.
- leave aside for 5 mins to activate. The yeast mix should be bubbly and foamy. This means yeast is activated.
If your mixture doesn’t look foamy.
1)Then you must have added yeast to too hot water so the yeast has died.
2)You have used cold water so yeast didn’t activated.
