Chicken Roast Recipe – Kerala Style Chicken Roast Recipe

This is one chicken dish which i have been planning to make for a very long time..Couple days back i made it and it was spot on..The flavours were perfect and we enjoyed with rice..

Preparation Time : 10 mins
Cooking Time : 45 mins
Serves: 4

Ingredients:


For Marination:
Chicken – 500 grams (with bone, cut into bite size pieces)
Yogurt / Curd – 1/2 cup
Chilli powder – 1 tblspn
Salt to taste
Ginger Garlic Paste – 2 tblspn
Turmeric Powder – 1 tsp


For Roast:
Coconut Oil – 1/4 cup
Fennel Seeds / Sombu / Saunf – 2 tsp
Mustard Seeds / Kaduku – 1 tsp
Onions -2  large sliced
Green Chillies – 2 slit
Curry leaves a handful
Ginger Garlic Paste – 2 tblspn
Tomato – 1 sliced thinly
Coriander Powder – 2 tblspn
Chilli Powder – 2 tsp
Turmeric Powder – 1 tsp
Salt to taste
Chicken Masala Powder – 1 tblspn
Coriander Leaves – a handful finely chopped


Method:

Mix all marination ingredients and set aside for 30 mins.

Now heat oil in a kadai, add mustard and fennel seeds.

Add in onions and cook till golden.

Add in green chilli and curry leaves and mix well.

Now add in ginger garlic paste and cook for 2 mins or so. Add in tomatoes and mix well.

Now add in spice powders and salt and mix well.

Add in chicken and mix well.

Cover and simmer for 30 mins.

Now increase the heat and dry the chicken, add in chicken masala powder and mix well.

Now add in coriander leaves and mix well

Serve

Pictorial:
Take chicken in a bowl
add all marination ingredients
mix well
add in yogurt
mix well..leave to sit for 30 mins or so
heat coconut oil and add in mustard and fennel seeds
add in onions
cook till light golden
add in chillies and curry leaves
add ginger garlic paste
mix well
add tomatoes
mix well
add salt and spice powders
mix well
add chicken
mix that through
lower the heat and let it simmer
the chicken will leach out its own juices
cook till the chicken is done
add chicken masala powder
toss well
cook till chicken is dry
add in coriander leaves
mix well

    Thank u so much for this recipe. I tried this yesterday and it was a huge hit . The only problem being i cooked chicken for another 20 minutes more with the 30 minutes you mentioned.

    I thought they put tamarind in it and also coconut milk. Am i mistaken?

      you can add coconut milk, but please no tamarind juice 🙂
