    Eggless whole wheat coffee cupcakes which is coffee flavour and taste so delicious. The cupcakes taste good and is so moist.

    Eggless Whole Wheat Coffee Cupcakes

    Soft cupcakes made using whole wheat flour, coffee powder, warm water and vinegar. The cupcake is eggless and has whole wheat flour instead of plain flour. The vinegar added in the cake makes it super soft and fluffy.

    A cupcake cake; is a small cake designed to serve one person, which may be baked in a small thin paper or aluminum cup. As with larger cakes, frosting and other cake decorations such as fruit and candy may be applied.

    Ingredients for Coffee Cupcakes

    Whole Wheat Flour

    Wheat flour is healthy alternative for regular plain flour and makes the soft cupcakes. You could use regular flour instead of all purpose flour.

    Instant Coffee Powder

    You can use instant coffee powder or espresso for the intense coffee flavour.

    Sugar

    Sugar is added for sweetness. You could use jaggery instead of sugar. 

    Vinegar

    vinegar is added in wet ingredient and it acts as an egg substitute in the cupcakes. Along with warm water, baking soda and vinegar acts to make a soft moist cupcakes.

    How to Make Coffee Cupcakes

    • Preheat Oven to 180 Degree C. Line a muffin pan with cupcake liners.
    • Take warm water, sugar, vanilla, vinegar and oil. Mix well till sugar melts.
    • Add in instant coffee powder and mix well.
    • Take wheat flour, baking soda, salt in a bowl and mix well.
    • Pour the wet ingredients into the wheat flour and mix well.
    • Spoon the batter into the muffin pan. Don't fill too much, just fill it half way through.
    • Bake the muffins in oven for 18 to 20 mins.
    • Remove the muffin pan from oven and leave to cool completely.
    • Make a batch of your favourite frosting. I made whipped chocolate frosting. I used dark chocolate instead of white.
    • Pipe the frosting on the muffins and serve immediately.

    Ingredients

    • 1 Cup Whole Wheat Flour (120 grams)
    • ½ cup Sugar (100 grams)
    • ¾ cup Warm Water (180 ml)
    • 1½ tsp Apple Cider Vinegar
    • ½ tsp Baking Soda
    • a pinch Salt
    • 3 tbsp Oil
    • ½ tsp Vanilla Extract
    • 2 tsp Instant Coffee Powder
    • 1 batch Whipped Ganache

    Instructions

    Coffee Cupcakes with Step by Step Pictures

    1)Take all your ingredients

    2)Take water in a bowl

    3)Drizzle in oil

    4)Add vinegar

    5)Pour in vanilla extract

    6)Add in sugar

    7) Pour in Instant coffee powder. Mix well.

    8)In a bowl, add in wheat flour.

    9)Add in baking powder and baking soda

    10)Mix well and set aside.

    11)Pour the wet ingredients into the dry and fold gently.

    12)The coffee batter is done.

    13)Pour the batter in. Don't fill too much.

    14)Bake till done.  Now let the cupcakes cool completely.

    15)Mean while make a batch of whipped chocolate ganache.

    16)Pipe the frosting over the cupcakes.

    17)Just like this.

    20)Serve and enjoy.

      Hi Aarthi, I am a very big fan of your blog and try out most of your recipes. Is there any substitute for Vinegar, like you mentioned can an egg be used ? What will be the count of eggs for the above measurement

        You can use lemon juice instead of vinegar.

      Hi Aarthi how much decoction should we take if we use it instead of instant coffee powder

        You might need to skip the warm water and add warm decoction. around 3/4 cup of brewed coffee. If you are using decoction which you made in filter coffee maker. I recommend you to add around 4 tbsp of decoction to 3/4 cup of warm water and use that.
