    A French vanilla-flavoured cake, filled with strawberry jam and dusted with sugar. Friends and family will gobble them up! This is perfect for this valentines day.

    Strawberry Jelly Filled Cupcakes

    Strawberry filled cupcakes is a delicious dessert. You need to make it in few steps.

    HOW TO MAKE STRAWBERRY JELLY CUPCAKES RECIPE AT HOME

    STEP 1: The Cupcakes

    Make a batch of my perfect vanilla flavoured cupcakes. The recipe is very straight forward. All you need is butter, sugar, eggs, flour, baking powder, salt, buttermilk. Also don't forget the vanilla. Use good quality vanilla extract. You could use vanilla bean if you are fancy. But plain ól vanilla extract will do just fine.

    Tip: You could bake the cupcakes a day in advance if you want too. Cupcakes can be baked couple days in advance too.

    STEP 2: The Strawberry Filling

    You can take the easy step and use store bought strawberry jam, jelly or preserve. But i like the fresh chunky strawberry filling which is homemade. Use finely chopped strawberries and add just sugar to it and cook till syrupy. The quantity of sugar totally depends on how sweet your strawberries are. Use cornstarch to thicken the strawberries into a jelly like. Thats it. You can make it up to 3 to 4 days in advance. store in fridge.

    Tip: you could use a dash of vanilla and balsamic vinegar in the end to "ohm up" the strawberries

    STEP 3: The Whipped Topping

    Whip cream with little icing sugar and vanilla till stiff peaks. You can make the whipped cream up to 2 days in advance and store in fridge.

    VARIATIONS TO STRAWBERRY JELLY CUPCAKES RECIPE

    1. You can use any fruit preserve instead of making filling.
    2. You can use any fruits instead of strawberries.
    3. Use almond extract instead of vanilla for almond flavoured cupcakes.

    STORAGE FOR STRAWBERRY JELLY CUPCAKES RECIPE

    Since this cupcakes has whipped cream and fresh fruit filling. It is best to store them in fridge.

    Strawberry Jelly Cupcakes Recipe

    Soft Vanilla flavoured cupcakes filled with a tart sweet strawberry filling and topped with whipped cream. Delicious little dessert.

    Ingredients

    • 100 grams Unsalted Butter ½ cup
    • ¾ cups Sugar 150 grams
    • 2 tsp Vanilla Extract
    • 2 large Eggs
    • 1¼ cup All Purpose Flour / Maida 150 grams
    • 1¼ tsp Baking Powder
    • ¼ tsp Salt
    • ½ cup Buttermilk 120 ml

    Strawberry Filling & Topping

    • 2 cup Strawberries chopped finely
    • 5 tbsp Sugar
    • 2 tbsp Cornflour
    • Whipped Cream as needed

    Instructions

    • Preheat oven to 180 degree C. Line 12 cup muffin pan with cupcake liners.
    • Mix flour, baking powder and salt in a bowl. set aside.
    • Take butter in a bowl, add in sugar and vanilla and beat till creamy and fluffy.
    • Add in one egg at a time and beat till fluffy.
    • Add in half of the flour, buttermilk and fold gently.
    • Add in remaining flour and fold gently.
    • Spoon this batter into cupcake liners. Don't fill too much, fill only ⅔rd of the liners.
    • Bake this for 18 to 20 mins in the oven.
    • Remove and cool completely.
    • When the cupcakes are cooling, make the filling.
    • Take finely chopped strawberries, sugar in a sauce pan and cook on medium flame till it gets syrupy.
    • Now mix cornflour with little water and pour it into the berries.
    • Cook till it thickens. Remove and set aside so it cools.
    • Now take the cupcake, scoop the middle of the cupcake a little so you can fill it with filling.
    • Spoon in the filling and top with whipped cream.
    • Serve.

    Notes

    1. You can bake the cake in advance. Bake it a day before and decorate it the next day.
    2. Once it is decorated it is best to store them in fridge.
    3. Cream the butter and sugar till fluffy will result in fluffy cupcakes.
    4. You can use strawberry jam instead of making the filling.
    5. Any flavoured jam can be used.
    6. Instead of strawberries, use blueberries, blackberries or raspberries.

    Strawberry Jelly Cupcakes Step by Step Pictures

    1)Preheat oven to 180 degree C. Take butter in a bowl.

    2)Add in sugar

    3)Cream it well using a electric beater or whisk till light and fluffy.

    4)Add in vanilla and mix well.

    5)Add in eggs, add one egg at a time.

    6)Mix well before adding another egg.

    7)Take flour in a bowl.

    8)Add in baking powder.

    9)Add in salt.

    10)Mix well and set aside.

    11)Add in half of the flour mixture

    12)Add in buttermilk

    13)Add remaining flour and fold gently.

    14)Line muffin tray with cupcake cases

    15)Fill with cupcake batter.

    16)Bake till done.

    17)Scoop the middle of the cupcakes and set aside.

    18)Take finely chopped strawberries in a sauce pan.

    19)Add in sugar

    20)Mix well and cook on low heat for 2 mins.

    21)Now it is syrupy.

    22)Add in cornflour slurry. Cornflour mixed with little water.

    23)Mix well and cook till it thickens.

    24)Spoon little filling inside.

    25)Like this.

    26)Top with whipped cream.

    27)Serve
