    Singapore Coffee Shop Style Breakfast

    I first had this breakfast platter in Malaysia, in a coffee shop. It is a popular breakfast dish from Singapore. The platter has kaya toast, half boiled eggs & black coffee. Some may feel grossed out seeing the half cooked wobbly eggs but it is a pure delight to eat specially when served with kaya toast

    About Singapore Kopitiam Breakfast

    Kopitiam is a traditional coffee shop in Singapore and Malaysia. Kopi means coffee, tiam means shop. Some of the popular breakfast dishes served in the shops are kaya toast, half boiled eggs, variety of coffee, simple dishes like mee goreng, laksa, nasi lemak, etc.

    This kaya toast and boiled egg platter is the popular breakfast option in Singapore. Everyone should experience it atleast once if you are visiting Singapore. It consists of kaya toast, half boiled eggs and black coffee.

    Now it is easy to make at home with this simple recipe. Just take your time during weekend and make this delicious Kopitiam style breakfast at home.

    Kaya Toast for Breakfast

    One of the most popular toast is Kaya toast. Kaya is nothing but coconut jam. Coconut cream is reduced with sugar, specially palm sugar (Gula Melaka) and thickened with egg yolks.

    Spread a thin layer of homemade kaya jam on toast. Place a slab of butter and enjoy with a cup of coffee or half boiled eggs.

    Coffee in Singapore is staple, it is more loved than tea. Singapore is known for its strong coffee culture. Many types of coffee is served across the coffee shops and street foods. It is called as Kopi (with condensed milk), Kopi O is black, Kopi C (with evaporated milk).

    What are Half boiled eggs?

    Half boiled eggs are eggs cooked until the whites are just set and the yolks remain wobbly. The eggs are actually cooked by soaking it in hot boiling water for certain amount of time. Half boiled Eggs are cracked directly into a serving bowl at the time of serving.

    It is usually served with a drizzle of soy sauce and sprinkled with a dash of white pepper powder. Dunk kaya toast in the runny and the taste is so yummy.

    Kaya Jam (Vegan & 15 minute Recipe)

    Kaya jam is coconut jam made with coconut cream, sugar, eggs. One of the most popular kaya jam is pandan flavoured. It has a smooth, custard-like texture and rich, coconut flavor.

    Traditionally Kaya jam is served with toasted bread and butter, which is known as kaya toast. It is popularly served in Singapore kopitiams (coffee shops) with half-boiled eggs and coffee for breakfast.

    Authentic kaya jam uses egg yolks to thicken. But this version of mine can be made in less than 15 minutes and uses wheat flour to thicken.

    Since using egg yolks can be quite complicated for many. I have created this simple recipe which uses wheat flour. It is fool proof, takes 15 minutes to make, anyone can cook.

    You can even use cornstarch instead of wheat flour. Super easy vegan or vegetarian kaya jam is ready and can be stored in fridge upto a month.

    Kopitiam Breakfast Ingredients

    • Bread slices - you can use white bread or wheat bread slices for making kaya toast.
    • Kaya jam - Kaya jam is coconut jam, I used my homemade kaya jam for the toast. It is made with wheat flour, coconut cream, sugar, pandan and salt.
    • Eggs - since we are making half boiled eggs, use fresh eggs.
    • Seasonings - for seasoning eggs, soy sauce and white pepper powder is used.
    • Butter - Slices of cold butter is placed inside kaya toast.

    Singapore Kopitiam Breakfast Step by Step

    Vegetarian Kaya Jam Recipe

    1)Take all your ingredients for making kaya jam. This recipe is super easy. You need coconut cream, sugar, pandan leaves (screw pine leaves), salt and wheat flour.

    2)Take pandan leaves in a blender. Add ¼ cup water to make it into a puree.

    3)Now it has ground into a puree.

    4)Pour this through a sieve. Strain and extract as much pandan juice as possible. This is going to flavour your kaya jam. Pandan leaf juice is optional in kaya jam, you can entirely leave this step and make plain kaya jam.

    5)take ½ can coconut cream and wheat flour in a pan.

    6)Mix this really well before turning on heat so there is no lumps formed.

    7)Cook this on low medium heat until raw smell from wheat flour leaves. It will take around 2 minutes only.

    8)Now add in sugar, pandan juice and mix well.

    9)once it is mixed well. Pour the remaining can of coconut cream into this and mix well so there is no lumps formed.

    10)Add in salt.

    11)Now cook this for 4 to 5 minutes until the mixture thickens and gets jam like.

    12)Kaya jam is ready. Transfer this to a container and allow it to set in fridge. You can prepare this the day ahead and store in fridge.

    Singapore Style Half Boiled Eggs Recipe

    13)Now lets make the breakfast. For this, first lets make half boiled eggs. Bring water to a full boil.

    14)Take eggs in a heat safe bowl. Pour the boiling hot water over the eggs. The eggs should be completely submerged.

    15)Cover the pot with a lid, leave to sit covered for 8 to 9 minutes.

    16)Once the timer is up, take the egg from the hot water using a slotted spoon. Set aside in a plate.

    17)Just before serving. Crack open the eggs in a small bowl. The eggs will be slightly set and the yolk will be very runny. If you prefer more set eggs, keep it in the hot water longer.

    18)Drizzle with soy sauce, white pepper powder just before serving.

    Kaya Toast Recipe

    19)meanwhile toast some bread in a toaster. If you don't have a toaster, toast the bread in a grill pan or tawa.

    20)You can use white bread or wheat bread. Take the toasted bread in a plate.

    21)Spread a thin layer of the kaya jam.

    22)Place a thin slab of cold butter on the bread.

    23)Sandwich the slices together to create a sandwich.

    24)Traditionally the crust from the bread is removed and the sandwich is cut in half.

    25)Brew some black coffee, serve with kaya toast and half boiled eggs. You have to dip the kaya toast in the eggs and enjoy.

    Homemade Kaya Jam

    • 1 can Coconut Cream 400 ml
    • ½ cup Granulated Sugar
    • ¼ cup Water
    • 10 no Pandan Leaf (Screw pine leaves)
    • ½ teaspoon Salt
    • 3 tablespoon Wheat Flour

    Half Boiled Eggs

    • 2 large Eggs
    • 1 teaspoon Soy Sauce
    • ¼ teaspoon White Pepper Powder

    Kaya Toast

    • 4 slices Bread
    • 4 teaspoon Kaya Jam
    • 4 tablespoon Cold Butter sliced thinly slab

    Instructions
     

    Homemade Kaya Jam

    • Take pandan leaves in a blender, add ¼ cup water and grind to a puree. Strain this through sieve and extract as much juice as possible.
    • Take ½ can of the coconut cream in a pan. Add in wheat flour and mix really well till lump free. Now heat this and cook for couple of minutes till raw smell leaves.
    • Add in sugar, pandan juice, salt and remaining coconut cream into the cooked wheat flour and mix really well till lump free. Now continue cooking until it thickens. Spoon this into a jar and store in fridge.

    Half Boiled Eggs Recipe

    • Bring water to a full boil. Take eggs in a heat safe bowl. Pour the boiling water over the eggs and cover them with a lid. Set a timer for 8 to 9 mins. Once 9 mins is up, remove the eggs and keep them in a bowl.
    • At the time of serving, crack open the eggs and add it in a serving bowl. drizzle with soy sauce and white pepper. Serve with kaya toast.

    Kaya Toast

    • Toast bread slices to your liking. Spread thin layer of kaya jam on each side of the toast. Place thinly sliced cold butter slab on one side of the toast. Sandwich with other slice. Trim off the crust. Cut into half.
    • Serve kaya toast with half boiled eggs and black coffee.
