Cold Pasta Salad Recipe / Pasta Salad with Homemade Vinaigrette Recipe

I am not a much of a salad fan, except some salads. But i never thought that i would make a pasta salad. But i ended up having some leftover pasta in the fridge, so decided to make a salad with it. You can make it as creamy version and a light version. For creamy version, you add a mayo based sauce over this which i will post very soon. 

This version is made with lemon juice and it is healthy one. It has lots of veggies in it and it is really filling too. You could add some olives in this too. So try this and let me know how it turned out for you..

Preparation Time : 30 mins
Resting time : 30 mins
Serves : 3 to 4


Ingredients:

Pasta – 2 cups cooked (Use any shape you wish)
Bell Peppers – 1 cup cubed (I used red, green & yellow)
Carrot – 1 small cut in a diagnol
Onions – 1 small peeled & sliced thinly
Coriander leaves – for garnishing

For Dressing:

Lemon Juice – 2 tblspn or to taste
Extra Virgin Olive Oil – 4 tblspn
Salt to taste
Sugar – 1/2 tsp
Pepper to taste
Green Chillies – 1 small chopped finely
Coriander leaves – 1 tblspn finely chopped
Ginger – 1 tsp finely grated
Lemon Zest – 1 tsp finely zested


Method:

Prepare your ingredients. Start by making dressing, take lemon juice in a jar, add in olive oil, and all other ingredients given for dressing. Clamp on a lid and shake the bottle well till it is all mixed up. Dressing done.

Take a bowl add in all the remaining ingredients, pour the dressing over this and toss well.

Set this in fridge for 30 mins.

Serve cold.

Take your ingredients
Chop up your veggies
Slice your onions thinly and soak them in cold water
Prepare ingredients for dressing
Now lets make the dressing
Squeeze some lemon juice
once your juice is squeezed
drizzle in extra virgin olive oil
Add in lemon zest, ginger and chillies
Add some sugar, salt and pepper
add in finely chopped coriander leaves
clamp a lid on
shake it baby..
Dressing done
take cooked pasta in a bowl
add the veggies
throw in the sliced onions
drizzle some dressing over
toss it up
you can scatter some more coriander if you wish
Serve yourself a bowl
Chilli it before your serve..
