    Cottage Cheese Ice Cream (High Protein)

    Cottage Cheese Ice Cream Recipe, is also known as High protein ice cream is made with fresh cottage cheese, sweetener of choice and flavourings. In this blog post, I am sharing 2 flavour variation of making cottage cheese ice cream, a fruity vibrant blueberry ice cream and a peanut butter high protein ice cream.

    You all must have came across the viral Tik Tok trending recipe that uses cottage cheese. It has got millions of views all over social media. I wanted to try this recipe ever since I came across it.

    Cottage cheese ice cream is said to be high in protein. The recipe its very simple and calls for just few ingredients. One of the ingredients is cottage cheese which is not readily available in my place. So I decided to make my own homemade cottage cheese.

    About Cottage Cheese Ice Cream Recipe

    Cottage cheese ice cream is an unique and delicious variation of traditional ice cream. It is high in protein and gets creamy texture from cottage cheese. You can make it in any flavour combinations. I have shared 2 flavours here.

    But first of all, what is cottage cheese? Cottage cheese is made with milk, cream and some kind of acidic ingredients.

    After doing lots of research online I found out that cottage cheese is made with milk and rennet. Rennet is a special ingredient and it is not readily available in every home. So I came up this with recipe which uses vinegar instead of rennet.

    Homemade cottage cheese takes just three ordinary kitchen ingredients: milk, vinegar, and salt. Easy method and simple techniques.

    Cottage cheese ice cream has gained some popularity in recent years due to several factors like health benefits, high protein, flavors, variety of uses. Since Cottage cheese is lower in fat and higher in protein it is many peoples preferred protein choice.

    Cottage cheese can be easily blended into many dishes like pancakes, smoothies and bakes. One of the most popular recipe is this ice cream.

    I am sure everyone loves ice cream. Because of its high calories people tend to stay away from it. But you can make this high protein ice cream in no time.

    The cool thing about this recipe is the variety of flavours you can make like lemon blueberry, mango lassi, coffee, chocolate mint, coconut lime, chocolate. With this base recipe, you can make tons of flavour combo.

    Ingredients

    • Cottage Cheese - You can use store bought cottage cheese or make homemade. I have a simple recipe for homemade cottage cheese that you can try.
    • Sweetener - it totally depends on your liking. I used honey, but you can use maple syrup, sugar to agave.
    • Flavourings - I used peanut butter, blueberries, for this 2 variations. But you can play around with your flavour. I also added some vanilla.

    Blueberry Ice cream (Step by Step Pictures)

    1)take cottage cheese in a blender jar. You can use a blender or food processor.

    2)Add in blueberries into the cottage cheese.

    3)Add in vanilla extract.

    4)Add in honey or maple syrup.

    5)Blend till smooth and creamy.

    6)Pour it in a freezer safe container and freezer overnight.

    7)Scoop and serve.


    Peanut Butter Ice cream (Step by Step Pictures)

    1)You need cottage cheese, peanut butter and honey for making this flavour. I also added some shredded chocolate and crushed cookies.

    2)Take cottage cheese, peanut butter and honey in a blender.

    3)Blend till smooth and creamy.

    4)Transfer this to a bowl, add in crushed cookies and chocolate.

    5)Mix gently.

    6)Transfer to a freezer safe container. Top with more cookies and chocolate. Freeze for 8 to 10 hours.

    7)Scoop and serve.

    8)Enjoy.

    Expert Tips

    Choose cottage cheese: Opt for a creamy and full fat cottage cheese which makes creamy mixture once blended.

    Blend well: When blending the cottage cheese with the other ingredients, make sure to blend until the mixture is smooth and well combined. This will result in a creamy and consistent texture.

    Add mix-ins: you can add various mix-ins to your cottage cheese ice cream. Chopped fresh fruits, chocolate chips, crushed cookies, or nuts can add flavor and texture to your ice cream.

    Serve and store properly: When serving, allow the ice cream to soften for a few minutes at room temperature before scooping.

    Ingredients
      

    Blueberry Ice cream

    • 1 cup Cottage Cheese
    • ¼ cup Honey or any Sweetener
    • 1½ cup Blueberry
    • 1 teaspoon Vanilla Extract

    Peanut Butter Ice cream

    • 1 cup Cottage Cheese (Homemade)
    • ¼ cup Peanut Butter
    • ¼ cup Honey
    • 3 tablespoon Dark Chocolate Shredded
    • 3 tablespoon Chocolate Cookies (any cookies)

    Instructions
     

    Blueberry Ice cream

    • Take cottage cheese, blueberries, vanilla and honey in a blender and puree smooth.
    • Spoon this into the freezer safe container and freeze till solid around 10 hours. Scoop and serve.

    Peanut Butter Ice cream

    • Take a blender jar. Add in cottage cheese, peanut butter, honey and blend till creamy. It will take around 1 min. Transfer the mix into a bowl. Add in shredded chocolate and crushed cookies. Mix well.
    • Spoon this into the freezer safe container, top with more cookies and chocolate and freeze till solid around 10 hours. Scoop and serve.
