    Crispy Stuffed Banana Recipe with Step by step pictures. Easy and delicious snack which is totally healthy. This snack is made with bananas and makes a great after school snack for kids. 

    Stuffed Bananas Recipe

    Crispy stuffed banana is a recipe which I came up with couple days back. I found couple of ripe plantains in my fruit basket. So decided to use it up. Usually we make pazham pori, cinnamon bananas or ethakka appam using ripe nendran banana. This time decided to make a crispy version of it and it taste super yummy.

    About Crispy Stuffed Banana Recipe

    Crispy stuffed banana is nothing but ripe plantain banana stuffed with a cardamom flavoured coconut filling. The bananas are coated in a batter and panko and fried till crispy.

    The best banana for this recipe is ripe plantain because of their firm nature. Other banana will never hold its shape when fried. So try and use nendran pazham | kerala banana or plantain. 

    I used a light batter coating and drenched it in panko breadcrumbs before frying. You can fry this in coconut oil or ghee. 

    Stuffed bananas taste great when served hot right out of the fryer. But it tend to stay crunchy even after it cools because of the panko coating.

    Ingredients for Crispy Stuffed Banana Recipe

    These are the basic ingredients which is used in this recipe.

    • 2 Ripe Bananas (Nendran Banana | Kerala Banana)
    • Oil or Ghee for Shallow Frying 

    For Stuffing

    • ½ cup Coconut grated
    • 3 tablespoon Jaggery
    • ½ teaspoon Ground Cardamom 

    For Batter & Coating

    • 3 tablespoon All Purpose Flour
    • 1 tablespoon Rice Flour
    • 3 tablespoon Plain Flour (for coating)
    • 1 teaspoon Sugar
    • Salt a pinch
    • ½ cup Breadcrumbs

    How to Make Crispy Stuffed Banana Recipe

    Filling Recipe

    Start by making the stuffing. Take coconut, jaggery and cardamom powder in a bowl and use your hands to mix it well. The moistness from the coconut will make the mixture perfectly moist.

    Stuffing Bananas

    Use ripe kerala banana (nendran banana). Peel the banana, Use a knife to make a slit. Remove little banana pulp so it creates a space for the filling. Now stuff the banana with the coconut filling. Once the bananas are stuffed. Set this aside till needed. 

    Pre Preparation

    Meanwhile lets make the. batter. Take plain flour, rice flour, sugar and salt in a shallow bowl. Add water and make it into a thin batter. In another shallow bowl take breadcrumbs. In another plate or shallow dish take some dry plain flour for coating the banana.

    Breading Bananas

    Now take your stuffed banana. Coat it in dry flour, no give a drench in the batter and coat in panko breadcrumbs. Repeat the process with the remaining banana.

    Frying

    Heat oil for shallow frying. Drop the banana in oil and fry on low to medium heat till golden and crispy. Keep rotating the banana using a tongs so it fries evenly. 

    Serving

    Drain and serve hot. You can cut it into bite size pieces for easy serving.
