    Eggless Yogurt Muffins

    I would say this is one of the easiest and fluffiest muffins you will ever make..It is so easy to make, you need a bunch of ingredients to make this and one of the main ingredient is thick yogurt which has to be un sour..And i used my homemade cake flour recipe for this and it made the muffins so fluffy..

    The original recipe calls for mini muffin moulds, but i made this in my large muffin tray and i got a good 6 muffins out of this and they were so puffy and had the wonderful muffin top..There is something so satisfying about simple muffin recipes freshly baked from oven had with a cup of masala chai or coffee or milk(if you are like me).

    How to make Eggless Yogurt Muffins

    1. Preheat oven to 180 degree C. Line 6 muffin tray with cupcake cases and set aside.
    2. Take yogurt, sugar, oil, baking soda and powder and vanilla in a bowl and mix well.
    3. Add in cake flour and fold gently,
    4. Scoop the batter into ice cream scoop and bake for 20 to 30 mins, insert a toothpick to see whether the cake is done or not..
    5. Remove the cake from oven, let it sit for 10 mins.
    6. Then serve warm.

    Ingredients for Eggless Yogurt Muffins

    • Homemade Cake Flour - 1 cup / 120 grams ( Recipe here)
    • Sugar - ⅓ cup / 65 grams
    • Thick Curd / Greek Yogurt - ¾ cup / 180 ml
    • Baking Powder - 2 tsp
    • Baking Soda / Cooking Soda - 1 tsp
    • Oil - 1 tblspn
    • Vanilla Essence - 1 tsp
      (My 1 cup measures 240 ml)

    Ingredients

    • 1 cup / 120 grams Recipe here Homemade Cake Flour
    • ⅓ cup / 65 grams Sugar
    • 3/ 4 cup / 180 ml Thick Curd / Greek Yogurt

    Easy Eggless Yogurt Muffins Recipe step by step pictures

    Take all your ingredients..You can see, these are few basic ingredients
    Line a muffin tray with cases
    Take thick unsour yogurt in a bowl
    add in oil
    add in vanilla essence
    now add in baking powder
    add in baking soda or cooking soda
    add in sugar
    mix really well
    add in cake flour..RECIPE  FOR HOMEMADE CAKE FLOUR
    fold gently..thats it your batter is made
    use a icecream scoop to scoop up the batter
    can you see how frothy the batter looks..it is all from the
    yogurt and the baking agents reaction
    i filled them right upto the top
    bake the,..look how puffy it has got
    Enjoy warm
    This is one of the softest and fluffiest muffin you will
    ever taste without eggs..

      Hope ur family and u are at the pink of ur health.As u even i lived my childhood in nagercoil am from the north by birth.Am a subscriber to ur channel.i like the originality in ur videos, how much ever heights u reach maintain dat coz i feel thats ur plus.now coming to ur yogurt muffin, i jus tried it.The outcome is what i wanted to share.The softness is there bt wen eating it, its kinda chewy and the cake doesn't come out completely clean off the cupcake liner unlike oder recipes.Why so dear.plz advise.
