    Eggplant Pasta Recipe

    Pasta is one of my favourite to cook mostly for dinner. I find it to be so satisfying and so easy to put together. My top favourite is tomato based ones and my sister loves her white sauce pasta a lot. 

    Eggplant is my all time favourite veggie and i love to add it in pasta a lot because it gives a nice taste to it and it goes perfect with that. I added cubes of mozzarella in to cooked hot pasta and added the piping hot sauce to it, this melts the mozzarella just a little and it stays in cubes which are just melted in the middle, so when you take a bite, you will get a taste of small bullets of molten cheese..YUM

    About this Recipe

    Eggplant, also known as aubergine or brinjal, is a plant in the nightshade family Solanaceae. Solanum melongena is grown for its edible fruit all over the world. The spongy, absorbent fruit, which is most commonly purple, is used in a variety of cuisines. By botanical definition, it is a berry that is commonly used as a vegetable in
    cooking.

    The nightshade family includes eggplants. Nightshades contain alkaloids that can be toxic, including solanine. Solanine shields these plants while they are growing. Eating the leaves or tubers of these plants can cause symptoms such as throat burning, nausea, vomiting, and heart arrhythmias.

    Pasta alla norma is a classic Italian pasta dish made with eggplant in a tomato sauce. Its an excellent, meaty-like but vegetarian main dish thats comforting, satisfying, and slurp-worthy good.

    Ingredients for Eggplant Pasta Recipe

    Eggplant :
    The flavour of eggplant is similar to that of summer squash or zucchini: tender, mild, and sweet with a slight vegetal bitterness. The flavour of whatever is cooked with the eggplant will be absorbed. When raw, it has a firm and spongy texture, but when cooked, it becomes meltingly tender.

    Pasta:
    When chewed, good pasta will have a chewy texture with a bounce. These are qualities that cannot be determined until the pasta has been cooked, but if the pasta wants to stick together after cooking or has an overly soft texture when chewed.

    Mozzarella Cheese
    The flavour of mozzarella is anything but simple for such a simple cheese. Our favourite mozzarellas have just the right amount of milky, grassy, and floral notes, with a hint of tang.

    Ingredients
      

    • 2 cups Pasta
    • 4 tbsp Olive Oil
    • ½ large Eggplant cubed
    • ½ cup Mozzarella Cheese cubed
    • 5 Tomatoes chopped very finely
    • ½ cup Tomato Ketchup
    • 1 tbsp Garlic chopped finely
    • 1 tsp Basil or Oregano
    • Salt to taste
    • 1 tsp Sugar
    • 1 tsp Chilli Powder or Chilli flakes
    • Parsley a handful finely chopped
    • 1 cup Water

    Instructions
     

    • Heat oil in a pan, add in cubed eggplant and fry till golden, drain and set aside.
    • In the same oil add in garlic and fry for few sec. Add in tomatoes, salt, sugar and mix well. Cook this till the tomatoes turn mushy.
    • Add in ketchup, chilli powder, water, basil and mix well. Bring this to boil and cook till oil separates.
    • Now add in the fried eggplant and toss well.
    • Meanwhile cook the pasta in salted water as per package directions. Drain them into a bowl.
    • Add the hot sauce over the hot pasta along with cheese and parsley.
    • Toss gently,
    • Serve.

      Came across this recipe on a random search, made it and loved it. Had never had brinjals in pasta before. Unfortunately didnt save the page so couldnt get it when i wanted to cook it again- tried different versions of this recipe available online instead, atleast 5 times. But none turned out this good, so kept searching for it and finally rediscovered the page again today! Will try cooking this again today ..thanks!!
