This is a pretty easy to make cheesecake. You just need a handful of ingredients to make this. The more cool thing is you dont need cream cheese to make this cheesecake. So you can easily call this recipe as cheesecake without creamcheese..I used hung curd to make this, i took some thick yogurt and poured in some cheesecloth lined over a sieve and put it in fridge and let it drip overnight, the next day i got the beautiful thick hung yogurt which can be easily substituted for cream cheese.
This cheesecake tasted so yummy. it was little dense but still creamy and tasty.. This has a buttery biscuit as the base and a luscious creamy filling. Really yummy. Hope you will try this out and let me know how it turns out for you..
Preparation Time : 30 mins
Setting Time : Overnight
Serves : 8 to 10 servings

Ingredients:

For Crust:
Digestive Biscuits – 12 to 15
Unsalted Butter – 75 grams melted

For Filling:
Hung Yogurt or Cream Cheese– 1 cup ( I used Homemade)
Icing Sugar or Powdered Sugar – 1 cup
Vanilla Essence – 1 tsp
Semi Sweet Chocolate Chips – 1.5 cup
Cream – 1/2 cup ( I used amul 25% fat cream)
Gelatin – 1 tblspn

For Topping:
Semi Sweet Chocolate Chips – 1 cup
Cream – 1/2 cup ( I used amul 25% fat cream)
My 1 cup measures 240 ml

Method:

Line a 18 cm round baking pan with plastic wrap and set aside.

Start by making crust. Take biscuits in a blender and powder them, add in melted butter and mix well.

Spoon this in the pan and press it evenly using a spoon. Chill this in fridge till you need them.

Now take chocolate in a bowl and melt them in microwave or a double boiler on low flame till it is melted. Set aside.

Whip some cream untill it forms soft peaks. Set aside.
First take gelatin and add in cold water. Mix well. Set aside so it softens. Now take this in a a sauce pan and melt it gently till the gelatin is completely melted.

Now take hung curd or cream cheese, powdered sugar, vanilla in a bowl and use beater to whip this till creamy.

Add in melted chocolate and whip to mix. Fold in cream and mix gently.
Drizzle in gelatin mix and mix gently.

Now spoon this mix over the chilled crust and chill this overnight.

Now remove this carefully from tin using the help of plastic wrap and set aside.

Slice and serve.
Pictorial:
First 1 line a 10 cm round tin with some plastic wrap,
this helps you un mould the cake easily.
If you have a spring form tin then you can skip this step
First lets make the base, take digestive biscuits in a mixer
powder it finely
take it in a bowl
Pour in melted butter
mix so it looks like damp sand
pour the mix into the tin
smooth the base using back of a spoon
base done..
i put this in freezer till i make the actual cheesecake filling

Take all your ingredients for filling
Take chocolate in a bowl
Melt it down..
Now take gelatin in a small bowl
add some water to it
let it soak for 5 mins till it blooms
transfer the mix to a sauce pan
melt it down gently
whip some cream till soft and set aside

Take cream cheese in a bowl
add in some powdered sugar
Add in vanilla essence
Use a whisk to whip it up
Now it is all mixed up
Add in melted chocolate
Mix well
I switched to a spatula
Add in whipped cream…
fold gently
add in melted gelatin
mix that well
Now spoon this over the base
Pat it few times on the counter
Put it in fridge to set
Now for the topping..Take chocolate chips in a bowl
Heat some cream in a pan, till it simmers
Pour it over the chocolate chips
Let it sit for 5 mins
Mix well
Now it done
Take the set cheesecake
Spoon the chocolate mix over this
spread it evenly and chill till it sets
now unmould
Slice and serve

Thank you for this great recipe. I made this cake for my mother's friends whilst visiting her in a small town in Kerala. Ingredients like cream cheese are scarce there and ovens are unreliable. They loved it!! My filling had more of a mousse like texture so I just renamed the dessert chocolate mousse but it was a big hit. Thanks again for this wonderful recipe.
