    Ridge Gourd & Egg Bhurji Recipe - Peerkangai Egg Poriyal Recipe

    This is my first post using ridge gourd, even though we buy ridge gourd often, i have never shared any recipes so far..So no worries few days back i picked 5 ridge gourd from my grocery shop, so you will be seeing so many peerkangai post soon..This dish has become my favourite sidedish. It is so easy to make and the combination of ridge gourd and egg is awesome. This taste great with rice or roti..

    Cooking Time : 20 mins
    Serves : 4

    Ingredients:

    Ridge Gourd / Peerkangai - 1 peeled and chopped finely
    Egg - 4
    Oil - 1 tblspn
    Mustard Seeds / Kaduku -  1 tsp
    Cumin Seeds / Jeerakan - 1 tsp
    Curry Leaves - 1 sprig
    Onion - 1 large chopped finely
    Capsicum / Bell Pepper - ½ cup chopped finely
    Green Chilli - 1 or 2 chopped finely
    Ginger Garlic Paste - 1 tsp
    Chilli Powder - 1 tsp
    Turmeric Powder - 1 tsp
    Coriander Powder - 2 tsp
    Garam Masala Powder - 1 tsp
    Salt to taste
    Coriander Leaves a handful finely chopped


    Method:

    Heat oil in a pan, add in mustard, cumin and curry leaves and let them sizzle.

    Add in onions, green chillies and saute for a min.

    Add in ginger garlic paste and mix well.

    Add in spice powders, salt and mix well.

    Add in chopped ridge gourd and toss well. Cover and cook for 5 mins or 8 mins till the ridge gourd is done.

    Now add in eggs and scramble it to your liking.

    Add in coriander leaves and mix well..

    Serve.

    start scrambling it

    you can scramble it to your liking
