    Strawberry Summer Cake

    This is one of  recipe which i wanted to bake for a very long time. . I always wanted to make a simple strawberry cake which should be easy to make and taste yum. And this is the cake.

    This cake is a basic vanilla cake recipe, but has strawberries in them. You can in fact use any berries as you like. And any fruits will be good as well, specially mangoes. This cake fits for any special occasion, or you can make any day special with this cake.

    About Strawberry Summer Cake Recipe

    Strawberry cake is a cake with strawberries as the main ingredient. It can be used in the cake batter, on top of cakes, and in the frosting of a strawberry cake, and they are typically served cold. Strawberry cakes can be made with strawberries in the batter,
    strawberries on top, strawberries or a strawberry filling in between the layers of a layer cake, or any combination of these ingredients. Some are made with strawberries mixed into a frosting. Strawberries can be used fresh or frozen. Some people use strawberry-flavored gelatin as an ingredient, which can turn the cake pink when mixed in with the batter. Strawberries were first used in a recipe for Strawberry cake published in The Ohio Cultivator on June 1, 1845. Eliza Leslie of Philadelphia, Pennsylvania popularised the recipe in her book The Lady's Receipt-Book (1847).

    Ingredients For Strawberry Summer Cake


    Strawberries :
    Strawberries in season and at their peak ripeness are fruity, sweet, and juicy, with a hint of acidity. When you bite into one of these plump and juicy red berries, you'll get a sweet burst in your mouth. or fragrance.


    Baking Powder
    Baking powder is used to increase the volume of baked goods and lighten their texture. It works by releasing carbon dioxide gas into a batter or dough via an acid–base reaction, which causes bubbles in the wet mixture to expand and thus leaven the mixture.

    Strawberry Summer Cake Preparation

    • Preheat oven to 180 degree C. Grease a 9 inch round tin with oil and dust with flour. Set this aside.
    • Mix together flour, baking powder and salt and set aside.
    • Now take butter, vanilla and sugar in a bowl and use a beater to whip this up.
    • Add in egg and whip again till fluffy.
    • Now add in half of the flour and fold gently. Add in milk and the remaining flour and fold gently. The batter will be thick.
    • Now spoon this batter in the baking pan and top with halved strawberries. sprinkle sugar on top and bake for 50 to 60 mins.  Insert a toothpick to check whether the cake is done, If the toothpick comes out clean then the cake is done.
    • Now let the cake cool in the tin for 15 mins or so.Now slice and serve.

    Ingredients

    • All Purpose Flour / Maida - 1 ½ cup / 180 grams
    • Sugar - 1 cup + 2 tblspn for topping / 200 grams + 2 tblspn
    • Unsalted Butter - 6 tblspn / 85 grams
    • Vanilla Essence - 1 tsp
    • Egg - 1
    • Milk - ½ cup / 120 ml
    • Baking Powder - 1 ½ tsp
    • Salt - ½ tsp
    • Strawberries - around 2 cups or as needed

    Instructions

    • Preheat oven to 180 degree C. Grease a 9 inch round tin with oil and dust with flour. Set this aside.

    Strawberry Summer Cake Step by Step

     
    Take all your ingredients

     

    Grease a 9 inch tin with oil and flour it well..Set aside

     

    Take flour in a bowl

     

    add in baking powder and salt

     

    mix well

     

    in another bowl, take butter

     

    whip it till creamy

     

    add vanilla

     

    add sugar and whip again till creamy

     

    now it is fluffy

     

    add in half the flour mix in

     

    fold gently

     

    add half of the milk

     

    add in remaining half of the flour mix in

     

    fold again gently

     

    now the batter is done

     

    spoon the batter in the pan

     

    spread evenly on top

     

    now it is spread

     

    take your strawberries

     

    remove the top

     

    slice in half

     

    arrange it on top

     

    sprinkle little sugar on top

     

    now bake this for 50 to 60 mins

     

    done

     

    Slice and serve

      I don't understand the following measurements.
      All Purpose Flour / Maida - 1 1/2 cup / 180 grams

      Please clarify about the measurement
      If 1 1/2 cup is 180gms
      How is 1 cup + 2 tblspn is 200 gms?

        You can use any essence for vanilla. But baking powder cannot be substituted
