When you are making something spicy like a pulav or briyani, the one thing which you want on the side is a cool and creamy raita..Without raita no meal is complete..We often make raita with a whole lot of different vegetables..But this one is my absolute favorite..It is made with cucumber and some extra special stuffs are added to it..And one tip which i can give is whenever you are making a raita add a touch of sugar to it, which makes the raita balanced in taste and taste way better..This is a perfect dish for hot summer days, when you want something cool..

Cucumber – 2 peeled, deseeded & Grated
Spring Onion – 1 chopped finely
Green Chilli – 1 chopped finely
Curd – 1 cup thick & unsour
Salt to taste
Sugar – 1 tsp
Take grated cucumber in your hands and squeeze them to take out their excess water. Add this to a bowl.
Take curd, salt, sugar, spring onion & green chilli in a bowl and mix well.
Add cucumber to this and mix well.
Serve with pulav.

|Start by preparing the cucumber..Peel em..|
|scoop the seeds out of it|
|squeeze the water out of it..set aside|
|chop spring onions and green chilli...|
|Beat curd till smooth|
|add some salt and sugar|
|add spring onion and green chilli|
|add cucumber to it|
|and mix well|
