Hyderabadi Vegetable Dum Biryani Recipe

I would never say that this is the traditional way of making hyderabadi dum biryani..I made this biryani few days back and it turned out so yummy..I hope you will love it for sure..

Preparation Time : 10 mins
Cooking Time : 45 mins to 1 hour
Serves: 3 to 4


Basmati Rice - 1 cup
Oil - 2 tblspn
Shahi Jeera / Black Cumin Seeds - 1 tsp
Ginger Garlic Paste - 2 tblspn
Carrot - 1 large cubed
Cauliflower - 1 cup florets
Beans - 10 chopped
Peas - 1 cup
Capsicum / Bell Pepper - 1/2 cubed
Green Chillies - 3
Mint Leaves a handful finely chopped
Coriander leaves a handful finely chopped
Biryani Masala Powder - 3 tblspn ( Recipe here)
Yogurt / Curd - 1/2 cup
Cream - 1/4 cup
Salt to taste

For Topping:
Coriander leaves a handful finely chopped
Mint Leaves a handful finely chopped
Ghee - 3 tblspn
Cashews a handful
Kishmish a handful
Onion - 1 medium size sliced thinly
Saffron a pinch
Warm milk - 3 tbspn
Rose Essence few drops
Kewra Essences few drops


Wash and soak basmati rice for 30 mins. Soak saffron in warm milk and set aside.

Heat oil in a pot. Add in cumin seeds and ginger garlic paste and saute for a min.

Add in the veggies and some salt. Saute it for couple of mins. Cover and cook for 5 mins.

Now add in green chillies and saute for a min.

Now add in yogurt and cream and mix well.

Now add in masala powder and mix well. Simmer for few more mins.

Now add in coriander and mint leaves and mix well.'

Meanwhile cook basmati rice till it is 90 percent done, Drain it and add it to the top of the veggie mix.

Heat some ghee in a pan, add in cashews and raisans and fry till golden. Add in onions and fry till golden brown.

Now pour this over the rice, top with coriander and mint leaves and spoon over saffron milk. Cover with a tight lid and put on low flame and let it be on dum for 15 to 20 mins.

If you are using bread, fry till golden. Drain it and add to the rice and fluff the rice.


Take all your ingredients

Soak saffron in warm milk 
You need assorted veggies chopped up

Heat oil in a pan

add in shahi jeera

add in ginger garlic paste

add in veggies

toss well

Add in green chillies

add in salt

Cover and cook for 5 mins

Now the veggies are half cooked, 

add in yogurt

add in cream

Mix well

Add in biryani masala powder

Mix well

Simmer till it thickens a little

add in coriander and mint

Mix well..

Now cook basmati rice..refer this post

Heat ghee in a pan, add in cashews..You can add some raisans as well

fried till golden
Now veggie mix is done

Spoon the rice over the masala

Spread it evenly

sprinkle some mint and coriander leaves

Top with fried onions

pour the saffron milk

add few drops of rose and kewra essence

now everything is added in

cover with a lid and put it over a tawa and cook on low heat for 20 mins

Now fluff the rice

I added some fried bread cubes
