Spiced Caramel Apple Cupcakes Recipe - Eggless Version



You can call these as cupcakes or muffins, whatever you call these are delicious. It is a soft muffin or cupcake filled with caramel apples. Taste so yummy either warm or cold. 


A cinnamony sugary apple is stuffed inside the muffins and the flavours just penetrate into the cupcakes as it bakes and makes the whole house smell divine..

Preparation Time : 10 mins
Baking Time : 25 mins
Makes : 6 cupcakes

Ingredients:

For Batter:
Wheat Flour / Atta - 3/4 cup
Cornflour / Cornstarch - 1.5  tblspn
Thick Plain Yogurt - 1/2 cup
Sugar - 1/3 cup
Oil - 3 tblspn
Cooking Soda / Baking Soda - 1 tsp
Milk - 1/4 cup

For Filling:
Apple - 1 peeled and chopped finely
Jaggery or Brown Sugar - 1/4 cup
Cinnamon - 1/2 tsp
Orange Juice - 2 tblspn

Method:

Preheat oven to 180 degree C. Line 6 cup muffin pan with cupcake cases. Set aside.

Start by making the filling. Take chopped apples, brown sugar, cinnamon, orange juice in a bowl and mix well. Set aside.

Now make the batter. Take yogurt, sugar, oil, baking soda in a bowl and whip till fluffy and creamy.

Now add in wheat flour, cornflour and mix well. Add in milk as needed.

Now spoon a spoonful of batter in the cupcake case, top with the apple filling, spoon some more batter on top. Now bake this for 20 to 25 mins till the cupcake is baked. Insert a tooth pick to check whether the cake is done or not.

Now remove it from oven and serve this warm.

LIne your cupcake tray with paper cups

take your apple


peel it and chop finely


take it in a bowl


Add in brown sugar..I used jaggery..You can use white sugar too


add in little orange juice


a dash of cinnamon


mix well..set this aside


take thick yogurt or curd in a bowl


add in sugar


add mix this well..My lil hands are helping me!


add in oil..you can use melted butter


add in baking soda


SMILE PLEASE!


as soon as you add baking soda, the mix will bubble up


add in wheat flour


add in cornflour as well


now mix this gently


Now the batter is pretty thick


i added some milk to make this thin


this is the consistency


Now time to assemble


take a spoonful of batter


pour it in the cups


now it is half filled


take your apple filling


spoon it in


now top with another spoonful of batter


time to bake


LOOK HOW BEAUTIFUL IT LOOKS

  1. Hi.....muffins are looking really soft and fluffy......I have two questions....first one ...is cornflour necessary? And second about wheat flour.....if I bake with wheat flour,the cake will become like pudding....that bread like texture will not come..what may be the reason? Please help me.

  3. Hi Aarthi... I did try this recipe but did not turn out like the other cupcakes.. it became very sticky and did not fluff the normal way.... Pls tell me... where is the mistake

  4. @Laviena DSouzaMay be the rising agent which you use is expired. Or you must have not baked it enough or too much sugar added

  5. @Ashacornflour will make it soft. Wheat flour with cornflour makes cupcakes soft. if your baking agent is expired then it wont rise properly.

    This luks so yum yum...wud lk to try this recipe...in this recipe no baking powder is added..is it not required for making cakes? Hope to get your reply.
