HAPPY EASTER EVERYONE…
Have you made the orange jam recipe which I posted earlier, if not try it immediately..Because you need that to do this yummy filled cupcakes..Don’t worry, you can make this with any jam as you like..So Chill out..I had some leftover jam lying in the fridge for weeks, I was so bored of spreading it on toast and eating. I wanted to make something new out of that..Hence this cupcakes were born..These are jam filled cupcakes which are covered with a jammy chocolaty frosting..It was D-E-L-I-C-I-O-U-S.
I highly recommend you are to try this recipe ASAP..Tell me how it turned out..

All Purpose Flour / Maida – 1 ¾ cup / 200 gms
Sugar – ½ cup / 100 gms
Baking powder – 1 tblspn
Eggs – 2
Milk – 2/3 cup / 160 ml
Butter – 100 gms melted / 4 ounces / ¼ pound
Vanilla Essence – 1 tsp
For Chocolate Jam Icing:
Dark Chocolate – 100 gms
Take eggs, milk, vanilla,melted butter in a bowl. Mix well. Set this aside till use.
In a mixing bowl take flour, sugar and baking powder and mix well. Pour the mixed wet ingrediants in this and mix into a smooth batter.
Now line your muffin tray with liners. Scoop out some batter using a icecream scoop and fill the cases.
Top it with a tblspn of orange jam (or any jam) and pour another scoop of batter.
Now bake this in the oven for 20-25 mins.
Let it cool down before icing.
For Icing, Take jam and chocolate in a bowl. Place this bowl over another bowl of simmering water and melt it down. Mix well to form a smooth icing.
Spread this over the cooled cupcakes and serve.

|Crack open 2 eggs along with some milk in a bowl|
|add some melted butter|
|and some good vanilla|
|mix it all up|
|Take sugar, baking powder and flour in a bowl|
|mix it with a spoon..I love my wooden spoon..|
|pour in the mixed up mixture|
|and mix well|
|scoop some out of it..Use a icecream scoop which makes life so simple|
|fill your cases|
|take some jam..I I used Homemade Orange Jam, Click here|
|put it right in the center|
|Cover it with another scoop of batter|
|Now Bake it|
|till you get nice light golden crust|
|Now make the frosting. Take jam and chocolate in a bowl and melt it in a double boiler|
|all meted and glossy|
|ice your cupcakes|
