Chicken Soup Recipe for Soul - Soup to Recover from illness


This is one of the flavourful soups and can be made within 30 mins overall. I love to have it on a cold day as well as if I am not felling that well..This clears off any throat infections because we add lots of pepper to this soup..


Hubby was not feeling that good for the past few days. So i made this soup for his lunch. It is light and has lots of pepper, cumin, turmeric, ginger and garlic which is really great to boost the immunity and helps to recover fast. And when you have cold or cough this is great, it soothes the throat..

Preparation Time : 5 mins
Cooking Time : 30 mins
Serves: 2
Ingredients:

Chicken - 250 grams
Onion-1 cut into big pieces
Salt to taste
Turmeric Powder - 1/2 tsp
Cornflour – 1 tsp

For Crushing:
Ginger – 1 inch piece cut into chunks
Cumin Seeds / Jeerakam - 1 tsp
Pepper - 1 tsp
Garlic - 4 cloves
Water – as needed

Method:

Take the grinding ingredients in a blender and pulse few times. Set aside.

Take chicken, salt, turmeric powder, onions, crushed masala and water in a pressure cooker.

Pressure cook for 3 whistle, now simmer the flame and cook for 5 mins. Turn off the heat and open the cooker. Remove the chicken and remove the meat from it. 

Add it back to the pot and add some cornflour which is mixed with some water and bring it to a boil.

Turn off the heat and Serve piping hot and enjoy.

I added pepper, cumin, ginger and garlic in a mortar and pestle


crush it well


you can pulse few times in a blender as well


take chicken in a sauce pan


add crushed masala


add in salt and turmeric powder


add in onions or peeled shallots


add water


pressure cook till done


remove the chicken and shred the meat





add this back into the pot


now add in cornflour water, this is cornflour mixed with some water


Boil it for few mins


Serve
