Rava Sheera Recipe - Sooji Halwa Recipe - Sooji Ka Halwa Recipe

Sheera or Sooji halwa is a great indian sweet made during vratham days or any special occasion. I made this yesterday to offer sai baba. It is a rich, clean sweet made with semolina. Everyone in the family loves it. You can make it in under 20 mins or so.

This is similar to southindian kesari, but it has few variations and added saffron in it.

Preparation Time : 5 mins
Cooking Time : 20 mins
Serves: 3 to 4


Sooji / Rava / Semolina - 1/2 cup
Sugar - 3/4 cup
Water - 1 cup
Ghee - 1/4 cup
Saffron a pinch
Warm Milk - 2 tblspn
Nuts - 1/4 cup (cashews & almonds)
Cardamom - 4 crushed


Soak saffron in warm milk.

Heat ghee in a kadai, add in sooji and roast it on low heat for 6 to 8 mins till it starts to smell good. After 2 mins add in cashews and almonds

In another sauce pan, take sugar and water and bring it to a boil. 

Once it is roasted, add in the sugar water and mix well. Cook till it thickens. Now add in saffron milk and mix well.  Cover and cook on a low heat for 2 to 5 mins.

Now open the pan and add in cardamom powder and mix well. Let it sit covered for 5 mins.


Take all your ingredients

soak saffron in warm milk 
heat ghee in a kadai

add sooji

roast them well

after 2 mins of roasting, add in cashews and almonds

roast well

keep roasting for 5 to 8 mins

the sooji shouldn't change colour. So you have to roast on a low heat

take sugar in a sauce pan

add water

bring it to a boil

add it in

mix well

it will thicken

add saffron milk

mix well

cover and simmer

now it is done

add cardamom powder

mix well

Followed every instructions step-by-step, just replaced the ghee with my favourite Gowardhan ghee and the dish turned out to be so tasty. I totally agree on the fact that, choosing the right quality of ghee will definitely add value to your dish and also, gives the perfect colour and flavour to it.
