Tender Coconut Kheer Recipe - Elaneer Payasam Recipe

This is so easy to make using condensed milk and tender coconut. So refreshing during this hot summer days. This kheer is a cook version, i have another version of tender coconut kheer which is a no cook version. Will share it soon.



I made this and took to my mom's place, my sister loved it so much. She finished the whole thing in few minutes. This recipe is similar to my tender coconut pudding.

Preparation Time : 10 mins
Cooking Time : 25  mins
Serves: 4 to 5

Ingredients:

Tender Coconut Water - 1 cup
Tender Coconut Flesh - 1 cup
Sweetened Condensed Milk - 1/2 cup
Milk - 2 cups
Sugar - 1/4 cup to 1/2 cup
Cardamom Powder - 1/2 tsp
Nuts - 1/4 cup chopped

Method:

Take half of the tender coconut and the coconut water in a blender and puree till smooth. Set aside.

Take condensed milk, milk, sugar in a pan, heat till it comes to a boil. Now reduce the heat and cook till it is reduced half.

Now remove it from heat and add in the tender coconut mix, chopped tender coconut, cardamom, nuts . Mix well.

Chill before serving.

Try to get young tender coconut


strain the water from it


scoop the flesh into a separate bowl


Now take half of the flesh in a blender


add some coconut water


puree smooth


set aside the mix and keep the remaining tender coconut aside

take condensed milk in a pan
add sugar


add milk


heat till it comes to a boil
now simmer this whole thing and cook till the milk is reduced by half


Take it off the heat..Add in the blended tender coconut mix


add chopped tender coconut


mix well


add cardamom powder


add chopped nuts


Serve cold
