    I made this and took to my mom's place, my sister loved it so much. She finished the whole thing in few minutes. This recipe is similar to my tender coconut pudding.

    What is a Kheer?

    Kheer, also known as payasam, is a popular sweet dish and type of wet pudding in the Indian subcontinent. It is typically made by boiling milk, sugar or jaggery, and rice, though rice may be substituted with one of the following: daals, bulgur wheat, millet,
    tapioca, vermicelli, or sweet corn. It is commonly flavoured with desiccated coconut, cardamom, raisins, saffron, cashews, pistachios, almonds, or other dry fruits and nuts, It is most commonly served as a dessert.

    About Elaneer Payasam

    Elaneer payasam also known as Tender coconut kheer or elaneer kheer is a dessert made with tender coconut water, tender coconut flesh, coconut milk, sweetened condensed milk. The ingredients are mixed together and boiled and served typically cold.

    Traditionally we used to consume lots of tender coconut, palm fruit also known as nungu during summer season. Since it is so refreshing. One of the main dishes which we make during hot summer days are using tender coconut and palm fruit. We make ice cream, kheer, puddings.

    This elaneer kheer is so easy to make using condensed milk and tender coconut. So refreshing during this hot summer days.

    Tender Coconut Payasam Ingredients

    Tender Coconut - Tender coconut flesh differs from mature coconuts, which are brown with hairy shells and have firm, opaque white flesh. Young coconut meat, on the other hand, can be eaten on its own, in salads, or in other dishes. Both tender coconut flesh and water is used in the recipe.

    Sweetened Condensed Milk - Sweetened condensed milk is cooked until it thickens and becomes a creamy pudding that can be used in a variety of dessert recipes. It makes the kheer so creamy.

    Milk - for any kheer or payasam recipes, use best quality full fat milk. It provides smooth, creamy mouthfeel. It acts as a thickener. Milk gives kheer its taste and flavour.

    Cardamom Powder - ground cardamom provides a lovely aroma and flavour to the dish.

    How to Make Elaneer Payasam (Stepwise Pictures)

    Try to get young tender coconut

    strain the water from it
    scoop the flesh into a separate bowl
    Now take half of the flesh in a blender
    add some coconut water
    puree smooth
    set aside the mix and keep the remaining tender coconut aside
     
     
     
    take condensed milk in a pan
    add sugar
    add milk
    heat till it comes to a boil
    now simmer this whole thing and cook till the milk is reduced by half
    Take it off the heat..Add in the blended tender coconut mix
    add chopped tender coconut
    mix well
    cardamom powder
    add chopped nuts
    Serve cold

    • Use young coconut for this recipe which provides the taste and texture.
    • Full fat milk provides the creamy texture.
    • Instead of using regular milk, you can use coconut milk as well.
    • You can use any nuts that you prefer. 

    FAQ

    1) Can we use regular coconut instead of tender coconut?

    Tender coconut has a silky texture and aroma which regular coconut doesn't have. This recipe needs the tender coconut water and flesh to get the rich taste.

    2)Can I use sugar instead of condensed milk?

    Yes you can use sugar instead of condensed milk. In which case you might need to boil milk and sugar until it is reduced till half to achieve the creamy texture.

    Equipment

    • Cooking pot
    • Blender

    Ingredients

    • 1 cup Tender Coconut Water
    • 1 cup Tender Coconut Flesh
    • ½ cup Sweetened Condensed Milk
    • 2 cups Milk
    • ½ cup Sugar
    • ½ tsp Ground Cardamom
    • ¼ cup Nuts chopped finely

    Instructions

    • Take half of the tender coconut and the coconut water in a blender and puree till smooth. Set aside.
    • Take condensed milk, milk, sugar in a pan, heat till it comes to a boil. Now reduce the heat and cook till it is reduced half.
    • Now remove it from heat and add in the tender coconut mix, chopped tender coconut, cardamom, nuts . Mix well.
    • Chill before serving.

      Hi, this looks so delicious. I want to try it today. Just one question. You use only half of the coconut water to make the blended mix. When do you add the remain half to the kheer?
