    Nungu also known as Ice apple, Palm fruit or Tadgola is a tropical fruit of palmyra palm tree. The fruit resembles ice-like texture and taste is more jelly like. Nungu Sarbath is a delicious drink made with Ice apple and nannari sarbath. Learn how to make palm fruit beverage with step by step pictures and video.

    Nungu Sarbath

    This drink is one of my all time favourite. Couple days back we visited a nearby zoo, when we were returning back there were lots of nungu stall in the side of the road. I asked hubby to stop by one, bought a glass for us enjoyed it.

    I realised I haven't posted the recipe for Ice apple or nungu in my blog so far. So i bought some palm fruit (ice apple) from the vendor. Next day I made this drink, palm fruit kheer and palm fruit pudding. Every thing turned out delicious

    About Nungu Sarbath

    Nagercoil is known for its palm fruit trees, during summer time we can see lots of palm fruit shop and tender coconut shop on the sides of the road. The recipe is simple just mix sarbath and palm fruit together and pour in tall glass tumblers with a spoon. It taste so yummy and it cools your body instantly.

    I use nannari sarbath for making this and it is a natural summer coolant. A mixture of ice apple and nannari sarbath is mixed together and served immediately. The drink itself is cooling but you can add some ice cubes if needed.

    What is Ice Apple (Palm Fruit)

    Ice apple is a fruit from sugar palm tree. It act as a natural coolant for our body during hot summer season. This ice-like fruit, Ice apple is also known as Tadgola in Marathi, Hindi and Nungu in Tamil. In english it is called as Asian palmyra palm.

    Ice fruit drink has tons of health benefits. It is rich in dietary fibre, helps with digestion and relieves constipation. This fruit is very low in calories and helps with weight loss. Some more benefits are

    • prevents dehydration
    • Treats mouth odour & wounds
    • Cools body instantly
    • Relieves constipation

    Nungu Sarbath Ingredients (Ice Apple Drink)

    Ice Apple | Palm Fruit | Nungu

    palm fruit has a whole brown or black shell which resembles a coconut. You can buy the fruit whole or ask the seller to remove the flesh alone. The flesh resembles ice-like, hence the name ice apple. It is a coconut-like fruit with a juicy white flesh which has a white outer skin. You have to remove the outer skin before making the beverage because the skin might taste bitter.

    Nannari Sarbath

    The sarbath which I use is a native brand called as "Raja Sarbath". The sarbath is orange in colour and has an earthy aroma of nannari roots. You can use homemade nannari sarbath.

    Expert Tips

    1. When you crush palm fruit, it will release some liquid. Don't mash it too much, there should be some chunks as well.
    2. You can use any sarbath in this recipe. if you don't have sarbath, you can add sugar syrup or jaggery.
    3. If you want to serve this drink cold, add some ice cubes and mix.
    4. I don't add water in this, the juice from the ice apple is enough.

    How to Make Nungu Sarbath (Stepwise Pictures)

    1)If you are making the sarbath directly in a serving glass. You have to pour some sarbath in the bottom of the glass and layer with palm fruit flesh. If you are making more than one portion, you can mix it in a bowl and then ladle into serving glass.

    2)I like to crush the nungu or ice apple slightly and then add into the glass.

    3)Pour some more sarbath to taste. The sarbath tends to be sweet so add very little in each layer. Top the sarbath with more crushed ice apple.

    4)4)Mix this really well using a spoon to evenly mix the sarbath with ice apple.

    Ingredients

    • 8 Nungu | Palm Fruit | ice Apple crushed roughly
    • 4 tbsp Nannari Sarbath

    Instructions

    • When you crush palm fruit, it will release some liquid. Dont mash it too much, there should be some chunks as well.
    • Take a glass and pour in sarbath, spoon in nungu and top with sarbath again and pour nungu over it.
    • Mix well and serve.
