Mee Goreng also known as Malaysian fried noodles is one of Malaysia's most loved street-food noodle dish available in most of roadside stalls, mamak shops. Mee Goreng is a spicy, tangy, slightly sweet noodle dish that is incredibly satisfying to eat. Like every noodle dish this one takes less than 30 minutes to put together which makes it a perfect weeknight dinner.

Malaysian Fried Noodles Recipe
Mee goren or Malaysian fried noodles is one of the simple dish to make and takes less time to cook. The special thing about this meal is you can just throw and toss everything and finish it within 20 to 25 minutes.
About Mee Goreng
Mee Goreng literally means "fried noodles" in Malay. The dish has strong roots in Indian-Muslim (Mamak) cuisine, and has influence from Chinese and Malay flavors. The combo of using kicap manis dark soy sauce, chili, garlic, and tomato ketchup creates the signature Malaysian flavor.
Mee Goreng is a bold noodle dish, it is spicy, sweet slightly tangy packed with egg, chicken, veggies which makes it a comforting satisfying meal.
This popular dish is made different ways all over Malaysia. And it is known by different names like Mee Goreng mamak, Maggi Goreng, Mee Goreng basah, Mee Goreng kering, Mee Goreng kampung by the style of cooking it.

Everything is cooked in a wok. Stir fried that how fried Malaysian noodles is done. Malaysian fried noodles is made using Yellow egg noodles, garlic, onion, chilies, soy sauce, sweet soy (kicap manis), egg, vegetables, tofu or prawns/chicken. So good and addictive.
The recipe which I showed is a basic recipe and is slightly on the spicier side with the addition of chilli garlic paste. You can skip it if you prefer it milder.
Authentic Malaysian mee Goreng noodles is available which can be used. But any egg noodles or even spaghetti can be used.
Make sure you use a wok and toss it on high heat to get the smoky wok hay flavor. And as far as veggies I used carrots, capsicum, bok choy.
You can use mushrooms, baby corn, bamboo shoots as well. Vegetarians can use tofu for protein. And you can add Prawn or squid along with chicken for best taste.

Ingredients
- Egg noodles - traditionally yellow egg noodles is used which absorbs the sauces and flavour better. Mee Goreng noodles is available too.
- Protein - I used eggs and chicken. You can use tofu and prawns too.
- Sauces - sweet soy sauce, dark soy sauce, vinegar, tomato ketchup are the main sauces. Adjust to your taste.
- Veggies - carrots, capsicum and bok choy is used. You can add mushrooms too.
- Aromatics - I used sliced onions and garlic to flavor the whole dish.
- Chilli paste - I wanted to make this spicy, so I used sambal olek or chilli garlic paste.
- Seasonings - salt, sugar, msg, pepper is used as seasoning.
- Garnish - spring onions and coriander leaves is added in end as garnish.

Step by Step Pictures
Pre-preparation
1) Bring lots of water to a full boil. Add salt into the water. Add in the egg noodles and cook as per package directions. Strain the noodles and rinse them with plenty of cold water. Strain the noodles through a colander and add little oil on it to coat the noodles. Set aside.
Heat oil in a pan. Add in egg and scramble them slightly. Set aside.

Aromatics
2)Heat a wok on high heat. Once wok is hot, drizzle oil into the wok. Now add in sliced onions and saute for 1 minute.

3)Add in chopped garlic and saute for few seconds.

4)Add in chilli garlic paste and stir fry for a minute.

Protein & Veggies
5)Add in chicken and toss well with onions and garlic. I used boneless chicken breast which I chopped into small pieces. You can use cooked shredded chicken too, in that case use that towards the end.

6)Add in carrots and capsicum and mix through.

Seasonings & Sauces
7)Add in chicken boullion cube. Instead of this you can use MSG too. This gives authentic street food style taste, you can completely skip this ingredient if you don't want to use it.

8)Add in sugar. I am not using salt now, since i will use lots of sauces. I will taste and add salt in the end.

9)Now add in 2 tablespoon sweet soy sauce, 1 tablespoon dark soy sauce, ketchup, vinegar.

10)Mix it well and cook for 1 minute on high.

Adding Noodles
11)Now add in the noodles, sweet soy sauce, dark soy sauce and mix well.

12) Toss that on high heat for 5 minutes. This makes the noodles get fried with chicken and vegetables.

Finishing touches
13)Add in the chopped bok choy, scrambled eggs and toss to combine. The heat will cook bok choy in minute.

14)Sprinkle black pepper powder. You can even add red chilli flakes if you want it super spicy.

15)Add spring onions and coriander leaves into the noodles and toss through.

16)mee goren is ready to dish up.

17)Enjoy this hot.

Expert tips
- You can use any noodles of your choice. Mee Goreng noodles or spaghetti can be used too.
- Mushrooms, spinach, baby corn, bamboo shoots, cabbage can be used. And for protein, you can use chicken, prawns, squid as well.
- Always taste the fried noodles and add more sauce to your liking.
- Sliced red chillies can be used if you prefer it spicy.
- Vegetarians can skip chicken and use tofu instead.
Serving & Storage
Enjoy mee goreng piping hot for best taste. You can top with fried egg, cucumbers for a satisfying feel. Leftovers can be stored in an air tight container in fridge and reheated in microwave at the time of serving.

For Boiling Noodles
- 200 grams Egg noodles
- 2 litre Water
- 1 tablespoon Salt
- 1 tablespoon Oil
Aromatics
- 4 tablespoon Oil
- 1 large Onion peeled and sliced thinly
- 6 cloves Garlic peeled and sliced
- 4 tablespoon Sambal olek chilli garlic paste
