This is one the simple and healthy sidedish which is made using spinach. In my place, there are varieties of spinach leaves are available and i make sure to include them in our diet regularly..I used agathi keerai to make this and it tasted pretty good..
Cooking Time : 15 mins
Serves : 2 to 4
Spinach – 4 cups chopped ( I used agathi keerai)
Oil – 1 tblspn
Mustard Seeds / Kaduku – 1 tsp
Urad dal / Ulundu Paruppu – 1 tsp
Onion – 1 medium size chopped
Garlic – 6 fat cloves
Dry Red Chillies – 2 to 3
Salt to taste
Coconut – 1/2 cup grated
Take garlic and chilli in a blender and crush them.
Heat oil in a kadai. Add in mustard and urad dal. Let them pop.
Add in onions and saute for few sec.
Add in garlic and chilli mix. Toss well for a min.
Add in the spinach and toss well in the oil. It will cook down.
Season with some salt.
Add in coconut and stir fry for few mins.

|Remove the leaves|
|Now take your other ingredients|
|Take garlic and chillies in a blender and crush them|
|just like this|
|Add mustard and urad dal to hot oil|
|Add in onions or chopped shallots|
|saute for few sec|
|add in the crushed garlic chilli mix|
|saute for a min or so|
|add in the washed spinach|
|now it has cooked and wilted|
|season with little salt|
|Add in coconut|
