    Badam katli Recipe

    Kaju katli, badam katli are so easy to make. They are my favourite kind of barfi since it doesn't need any major sugar consistency checking. And it taste way more delicious that regular ones. These ones are soft and taste rich, love it.

    Ingredients for Almond Katli

    • Almonds / Badam - ¾ cup
    • Sugar - ½ cup
    • Water - 3 tblspn
    • Cardamom Powder - ½ tsp
    • Ghee - 1 tblspn
    • Saffron few strands (optional)

    How to Make Almond Katli

    1. Spread little ghee on a stainless steel plate and set aside.
    2. Take almonds in a bowl, add hot water over it and let it sit for 15 mins. Now you can easily peel off the skin of the almonds. Set aside.
    3. Take the almonds in a blender and pulse few times so it is powdered into a coarse crumbs. Don't blend since it will turn into a paste.
    4. Now take sugar and water in a nonstick pan and heat on low heat till sugar melts.
    5. Now add the almond powder and mix well. So it thickens and leaves the sides.
    6. Add little ghee and mix well.
    7. At this point take it in the plate and roll it thin using a rolling pin.
    8. Cool it down and cut into wedges.

    Badam katli Step by step

    Grease a steel plate with ghee

     

    take almonds in a bowl

     

    add hot water and soak it for 15 mins

     

    peel it with your fingers, the skin will come off pretty easy
     
     
    all peeled

     

    take it in a blender

     

    pulse it few times so it is nice and crumbly..don't blend too much, else it will get pasty

     

    take sugar in a pan

     

    add water

     

    heat gently so it melts

     

    add in cardamom

     

    add almond powder

     

    mix well

     

    cook till it thickens

     

    like this

     

    now it is thick

     

    it will slowly start to leave the sides

     

    now it is done

     

    add ghee

     

    mix well

     

    transfer this to the plate

     

    roll it using a rolling pin

     

    cut it into diamonds
