    Chicken Gravy, A family favorite recipe made with onion, tomato base. Chicken is marinated with yogurt, spices, ginger & garlic. The chicken is cooked in onion, tomato and capsicum base which is thick and a layer of oil floating on top. This is a delicious chicken gravy recipe which can be served with naan and ghee rice.

    Chicken Gravy

    I have been looking for a chicken gravy for pulav, naan which is thick, little on the sweeter side and little spicy and masala like. Finally my athai (aunt) gave me a recipe for the delicious chicken gravy and ghee rice which is served in wedding. Immediately I tried it and loved it to the core. This makes an amazing side dish for chapati, make sure you check my 120+ side dishes for chapati.

    About Chicken Gravy

    Chicken gravy is nothing but tender pieces of chicken cooked in a thick onion tomato based masala with spices. The curry has a layer of oil floating on top which makes it visually pleasing.

    Succulent chicken pieces marinated with ginger, garlic, spices and yogurt is cooked with onion tomato base. The base of the gravy is so flavourful and goes well with rice, pulao, jeera rice, roti or paratha.

    Chicken Gravy Ingredients

    Chicken - for any gravy made with chicken it is preferred to use chicken with bone-in and without skins. Cut chicken into small pieces for faster cooking.

    Onion - onions is sliced and sauted. Half of the cooked onions is ground to a smooth paste and use for thickening of the gravy.

    Tomatoes - no chicken curry is complete without tomatoes. it adds sweetness and tangyness.

    Green Chillies - whole green chillies is slit and added for flavour.

    Ginger & Garlic - take equal amount of fresh ginger and garlic in a blender and grind till smooth.

    Spice Powders - regular spices like kashmiri chilli powder, coriander, turmeric and garam masala powder forms the base.

    Whole Spices - use whole spices like cinnamon, fennel and cumin for flavour.

    Chinese Sauces - this gravy is a fusion, it has a combination of indian spices and chinese sauces like soy sauce, green chilli sauce and lets now miss tomato ketchup.

    Chicken Gravy Preparation

    Cooking Chicken

    Mix chicken with the marination ingredients and set aside for 30 mins. Now take this in pressure cooker, add 1 cup of water and mix well. Cover and pressure cook for 2 whistle, lower the flame and cook for 10 mins. Now turn off the heat and let the steam go all by itself.

    Making Masala

    Now heat oil in a kadai, add in fennel, cumin and cinnamon. Add in onions, salt and saute till lightly golden. Add in capsicum and tomatoes and cook covered till mushy. Now add in the spice powders and mix well. Add in ketchup, soy sauce and green chilli sauce and mix well.

    Making Chicken Gravy

    Add in the cooked chicken with any liquid and mix well. Now simmer this for 10 to 15 mins. Add in coriander leaves and mix well. Serve.

    How to Make Chicken Gravy (Stepwise Pictures)

    Marinating Chicken

    1)Take cleaned chicken in a bowl.

    2)Add in chilli powder, turmeric powder and garam masala powder. Season the chicken with salt.

    3)Add in ginger garlic paste.

    4)Add in yogurt.

    5)Squeeze in some lemon juice.

    6) Mix well and leave to marinate for at least 30 minutes.

    Cooking Chicken

    7)You can cook them in a pot for 30 minutes until chicken is cooked. Or you can use a pressure cooker to cook the chicken.

    8)Pour in little water. Pressure cook for 2 whistle.

    9)Once the pressure is naturally released, open the cooker and set aside.

    Making Masala Base

    10)Now let's make the masala. Heat oil in a kadai. add in spices.

    11)Add in sliced onions.

    12)Season the onions till salt and saute till golden.

    13)Now the onions is light golden in colour.

    14)Add in tomatoes and bell peppers.

    15)Saute for 4 to 5 minutes till it is mushy.

    16)Take half the mix in a blender and puree till smooth.

    17)This is onion tomato masala.

    grind to a smooth puree

    18)Add it into the kadai with the sauted onions and tomatoes.

    19)Add in ginger garlic paste.

    20)Mix it well.

    22)Add in spice powders

    23)Mix and cook till oil separates.

    24)Add in tomato ketchup and green chilli sauce.

    27)Add in cooked chicken along with cooking liquid.

    Ingredients

    For Marination

    • 1 kg Chicken bone-in cut into small pieces
    • 1 tbsp Chilli Powder
    • 2 tsp Turmeric Powder
    • 2 tsp Garam Masala Powder
    • Salt to taste
    • ½ cup Yogurt / Curd
    • 2 tbsp Lemon Juice
    • 2 tbsp Ginger Garlic Paste

    For Tempering

    • 5 tbsp Oil
    • 1 tsp Fennel Seeds
    • 1 tsp Cumin Seeds
    • 1 stick Cinnamon Stick

    For Chicken Gravy Base

    • 4 large Onion sliced thinly
    • 1 Capsicum sliced thinly
    • 4 large Tomatoes sliced thinly
    • 2 tbsp Ginger Garlic Paste
    • 1 tbsp Chilli Powder
    • 2 tbsp Kashmiri Chilli Powder
    • 2 tbsp Coriander Powder
    • 1 tsp Turmeric Powder
    • 2 tsp Garam Masala Powder
    • 3 tbsp Tomato Ketchup
    • 2 tbsp Green Chilli Sauce
    • 1 tbsp Soy Sauce
    • Salt to taste
    • 3 tbsp Coriander leaves finely chopped

    Instructions

      Chicken gravy looks yummy. But is it common to add soy sauce to this south indian recipe? Also, is that ok to substitute with green chillis instead of chilli paste?

        This is a fusion recipe. Soy sauce is mainly for colour in this recipe than flavour. And yes you can use green chillies.
