Easy Ridge Gourd Subzi Recipe – Peerkangai Curry Recipe

This is my 2nd post using ridge gourd, even though we buy ridge gourd often, i have never shared any recipes so far..So no worries few days back i picked 5 ridge gourd from my grocery shop, so you will be seeing so many peerkangai post soon..This dish has become my favourite sidedish..It takes just few mins to make..This taste great with rice or roti..

Preparation Time : 10 mins
Cooking Time : 20 to 30 mins
Serves: 4

Ingredients:

Ridge Gourd / Peerkangai – 1 peeled and cubed finely
Oil – 1 tblspn
Mustard Seeds / Kaduku –  1 tsp
Cumin Seeds / Jeerakam – 1 tsp

Curry Leaves – 1 sprig
Onion – 1 large finely chopped
Green Chillies – 1 chopped finely
Tomatoes – 2 large pureed
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi – 1 tblspn
Turmeric Powder / Manjal Podi – 1 tsp
Garam Masala Powder – 1 tsp
Salt to taste
Water as needed
Coriander leaves a handful finely chopped


Method:

Wash and peel ridge gourd, chop it finely and set aside.

Now heat oil in a pan, crackle mustard, cumin and curry leaves.

Add in onions and chillies, salt and saute till golden.

Add in tomato puree and cook till oil separates.

Now add in spice powder and fry for couple of mins.

Now add in cubed ridge gourd and mix well. Cover and simmer for 5 mins till it is cooked.

Now add in water and bring it to a boil.

Simmer for 10 mins.

Add in coriander leaves and mix well. Serve with roti.

chop them finely
Take your ingredients
Crackle cumin and mustard in some oil
add in curry leaves
let them sizzle
add in onions
add in chillies
sprinkle over some salt
mix well
fry till it gets golden
add in pureed tomatoes
cook till oil separates
add in coriander and turmeric
add in chilli powder and garam masala powder
mix well
add in chopped ridge gourd
mix well
cover and simmer
now it is cooked
add in water
Mix well..bring this to a boil
simmer for few mins till oil separates on top..add in coriander leaves
Serve..
