    Chinese ginger garlic chicken recipe with step-by-step pictures. Simple stir-fry chicken recipe from China seasoned with soy sauce, salt, white pepper powder and flavoured with ginger and garlic.

    Chinese Ginger Garlic Chicken Recipe

    I came across this recipe from a Chinese cookbook. The steps for this recipe was very straightforward and simple which made me try it immediately. There are four steps included in this recipe. Marination, preparation of sauce, frying the chicken, and finishing the dish.

    About Ginger Garlic Chicken

    Ginger garlic chicken is a popular Chinese dish which is usually served with steamed rice, fried rice or noodles. I used chicken breast in this recipe which is more convenient and cooks really fast.

    The sauce in this recipe calls for basic soy sauce vinegar which you already have in your fridge.

    Chicken is coated in cornstarch and fried till crispy. Fried chicken is tossed in the sauce which is flavoured with ginger and garlic.

    I served this dish as an appetiser but you could serve it with noodles or fried rice.

    Step by Step Pictures

    Marination

    1)Slice boneless chicken breast thinly and set aside. You can use chicken thigh as well.

    2)Add salt, white pepper powder, oil, 1 tablespoon cornstarch, water. Mix it really well and set aside for five minutes.

    3)This technique is called as velveting. It makes chicken super juicy and moist, just like the ones which you get in Chinese takeout restaurant.

    Make Sauce

    4)Now let's make the sauce. In a small mixing bowl, take chicken stock, soy sauce, vinegar and sugar. Mix well and set aside.

    Frying Chicken

    5)Now for frying the chicken take a wok and Heat some oil for frying.  Add 4 tablespoon of cornstarch into the marinated chicken and mix well.

    6)This create crispy exterior when the chicken is fried.

    6)Now add the chicken in hot oil in batches and fry for 30 seconds on high heat. Remove it to a bowl.

    7)Just flash fry for 30 seconds not more than that. This is your first fry. It seals in the chicken juices. Repeat with the remaining chicken pieces too.

    8)Reheat the oil till it is nice and hot. Add in the first fried chicken and cook on high heat for 30 to 45 seconds.

    9)Remove it to a bowl and set aside. This way the chicken stays super crispy.

    Making Stir fry sauce

    10)Now add in chopped ginger and garlic in the wok and sauté for 30 seconds.

    11)Pour in the sauce and bring it to a full boil.

    12)Add the fried chicken. Mix well in the sauce.

    13)Add in some cornstarch slurry and toss well.

    14)The corn starch will thicken the sauce and coat the chicken beautifully.

    15)Serve the chicken with a sprinkle of sesame seeds with some rice or noodles.


    Expert Tips

    • Make sure the chicken and sliced thinly so it cooks really fast without drying when frying.
    • When frying the chicken make sure the oil is really hot.
    • Prepare all the ingredients in advance before you start cooking.
    • Make sure you cook the dish and really high.
    • You could use chicken stock powder or chicken bouillon cubes instead of fresh chicken stock.
    • Instead of chicken stock you could use vegetable stock as well.
    • Chicken thighs can be used instead of chicken breast but the cooking time be vary.

    Storage & Serving

    Chinese ginger garlic chicken is best had fresh piping hot. This chicken dish is best served hot with some steamed rice, fried rice or noodles.

    Ingredients
      

    For Stir Frying

    • 1 tablespoon Peanut Oil
    • 2 tablespoon Garlic peeled & chopped finely
    • 2 tablespoon Ginger peeled & chopped finely
    • 2 teaspoon Sesame Seeds

    For Marination

    • 2 large Boneless Chicken Breast sliced thinly
    • 1 teaspoon White Pepper Powder
    • 1 teaspoon Salt or to taste
    • 1 tablespoon Water
    • 1 teaspoon Cornstarch
    • 1 tablespoon Peanut Oil

    For Frying Chicken

    • 4 tablespoon Cornstarch
    • Oil for Deep Frying

    For Sauce

    • 1 cup Chicken Stock
    • 1 tablespoon Soy Sauce
    • 1 tablespoon Rice Vinegar
    • 2 tablespoon Sugar

    Cornstarch Slurry

    • 2 teaspoon Cornstarch
    • 3 tablespoon Water

    Instructions

    • Now let's make the sauce. In a small mixing bowl, take chicken stock, soy sauce, vinegar and sugar. Mix well and set aside.
    • Now for frying the chicken take a wok and Heat some oil for frying. Add 4 tablespoon of cornstarch into the marinated chicken and mix well. Now Add the chicken in hot oil in batches and fry for 30 seconds on high heat. Remove it to a bowl. Now let's double fry the chicken. Reheat the oil till it is nice and hot. Add in the fried chicken and cook on high heat for 30 to 45 seconds. Remove it to a bowl and set aside.
    • Mix 1 tablespoon cornstarch with 3 tablespoon water. Set aside till use. Now drain all the oil reserving just 1 tablespoon of oil in the wok.
    • Now add in chopped ginger and garlic in the wok and sauté for 30 seconds. Pour in the sauce and bring it to a full boil. Add the fried chicken along with some cornstarch slurry and toss well. The cornstarch will thicken the sauce and coat the chicken beautifully.
    • Serve the chicken with a sprinkle of sesame seeds with some rice or noodles.
