    Lemon Ricotta Cake Recipe with step by step pictures. Traditional italian cake made using ricotta, lemon and eggs creates a tender sponge.

    Italian Lemon Ricotta Cake Recipe

    Lemon Ricotta Cake. One of my all time favourite cake..I could never get enough of lemon cakes. So here i am with another recipe of it. This time i added ricotta cheese in this and it turned out pretty damn delicious.

    How to Make Italian Lemon Ricotta Cake

    • Preheat oven to 180 degree C. Grease a bundt pan or any pan with oil, sprinkle with flour and coat on all sides. Tap of the excess.
    • Take sugar, lemon zest in a bowl and mix well.
    • Add in eggs, lemon juice, vanilla, ricotta and whisk well.
    • Add in flour, baking powder, salt and mix well gently.
    • Now add in milk and fold gently.
    • Spoon this into the pan and bake for 50 to 55 mins.
    • Remove them and let it cool for 10 mins in the pan, now invert it on a cooling rack and cool completely.
    • Dust with icing sugar and serve.

    The combination of lemon and ricotta works magic in this cake and creates a lovely soft and light texture in this cake.I really enjoy it so much. 

    You can use my homemade ricotta cheese recipe as well.

    1. Take milk in a sauce pan. Bring it to a simmer. Don't let it boil.
    2. Add in salt and mix well.
    3. Now add in lemon juice and mix gently till it curdles.
    4. Once it is curdled strain it. Let it sit for 5 mins.
    5. Now scoop it into a container and serve.

    If you want to make whole milk ricotta use a mixture of milk and cream.

    You can easily make this cake as orange cake, instead of lemon zest, add orange juice for lemon juice.

    Ingredients
      

    • All Purpose Flour / Maida - 1 ¼ cup / 150 grams
    • Salt - ½ tsp
    • Baking Powder - 1 tsp
    • Sugar - 1 cup / 200 grams
    • Lemon zest - 1 tblspn
    • Eggs - 2
    • Ricotta Cheese - ½ cup
    • Vanilla Essence - 1 tsp
    • Melted Butter - ⅓ cup / 80 ml
    • Lemon Juice - 4 tblspn
    • Milk - ¼ cup / 60 ml

    Instructions

      I've tried the French Apple cake 3 times now and it was a big WOW by my guests. I don"k know what Maida flour is but I use Robin Hood flour also I used a springform pan and it was easy to remove from pan. i also made a butterscotch sauce with it. it was delicious. 1 tbs. cornstarch, 1 cup brown sugar, 2 tbs butter. 1 1/4 cup of boiling water/
      over medium heat add butter and sugar a then add cornstarch stir then add boiling water stir until it thickens. i add 1/4 cup of rum it's optional. when serving put some sauce over it. Mmm yummy!
