    Marie Biscuits Ingredients

    • All Purpose Flour - All purpose flour is used in this recipe. But equal amount of wheat flour can be used as well. There might be a slight change in texture, but it will be healthy option.
    • Milk - Use full fat milk. Milk along with butter adds the moisture for making the dough. Also it tenderizes the biscuit dough.
    • Sugar - Very little amount of sugar is required. Since marie biscuits are not an overly sweet biscuits.
    • Butter- Unsalted Butter is what you need for the flavour. You can use butter substitutes as well.
    • Baking Soda - Baking soda also known as cooking soda helps to make the cookies or biscuits light and crispy.

How to Make Marie Biscuits at Home

    Pre-Preparation

Take milk, sugar, baking soda in a sauce pan and heat it up. Cook till sugar melts and it comes to a good boil. Take it off the heat and set aside to cool. Preheat oven to 160 degree C.

    Making Biscuit Dough

Take flour, butter and salt in a bowl. Use a fork to rub the butter into the flour. Once it is mixed, add the liquid and form into a dough.

    Rolling & Baking

Now take a portion of dough and roll it thin. Cut it using round cutter. Arrange it in a baking tray which is lined with parchment paper and bake for 8 - 10 mins. Remove and cool on a wire rack completely. Store in an air tight container.

    Step by Step Pictures

1)Take milk in a sauce pan. Use full fat milk for richness.

2)Add in sugar. I am using granulated sugar.

    3)Add baking soda.

4)Place on medium heat and bring it to a full boil. mix gently so the sugar melts.

    6)It will get frothy first.

7)Bring it to a boil. Once it boils like this, take it off the heat.

8)Take it off the heat and allow it to cool down.

10)Now lets make the cookie dough. Take plain flour in a bowl.

11)Add a pinch of salt and mix well into the flour.

12)Add in butter. I am using cold butter, so we can crumble it into the flour.

13)Rub it well into the flour with a fork or using your finger tips.

14)Now the butter has incorporated into the flour evenly.

15)Pour in the milk mixture we we boiled earlier and shape it into a soft dough.

16)Take the dough on a sheet of parchment paper.

17)Roll it into a thin roti like.

    18)Cut it using a cutter.

    19)Make small cookies like this

20)Remove the cookie gently. You can bring the scraps together and roll again.

21)Arrange it in a parchment lined tray. Leave some space between each of them.

22)Prick it all over using a fork. So the cookies doesn't puff up.

23)Place it into the preheated oven and bake.

25)Bake the cookies until it gets light golden brown shade. Remove from oven and allow to cool completely.

26)Once it is cool, store in an air tight container.

    27)Enjoy.

    Expert Tips

    • Equal amount of wheat flour can be used instead of all purpose flour.
    • Make sure you cool the milk mix a little before adding it into the flour.
    • If you feel like the dough is too dry, then add in more milk.
    • Butter adds flavour for the dough. So use butter for best taste.
    • Don't over bake the cookies else it may burn. Bake till it turns golden.
    • Biscuits may look soft when you remove it from oven, but it will harden as they cool.

    Storage & Serving

Biscuits can be baked, cooled completely and stored in an air tight container upto a week. Marie biscuits can be served with a cup of tea or coffee.

I haven’t tested it, but I would guess that’s because the butter melted before getting into the oven. Try to use cold butter and maybe refrigerate between steps.

Thank you very much for the recipe. The biscuits tasted just like the store bought ones that my mother-in-law asked me why they were warm - she didn't expect that they were homemade ☺️
I measured using weight, but when I made the dough, I felt it was a bit dry and added a spot of milk and some ghee. Was that the right thing to do? If I want it a little more crumbly and a little less sweet, can I increase butter and reduce sugar? Do you think that will work?

I found the quantity of milk is not enough and it was too difficult to add extra in once I had mixed it into the flour. If you are going to make this, you definitely need to use more milk or butter for a better dough to work with.

      Hi Aarthi,

Love your blog! One question though, can I use wheat flour instead of Maida using the same measurements? I'm making it for my one year old and we don't eat maida at home.
