Actually I made it as a non-veg version, but you can easily make it complete vegetarian by skipping the chicken part alone. It still taste good.

    About Ramadan Nombu Kanji

Ramadan nombu kanji is a wholesome hearty porridge made with rice, moong dal, vegetables, chicken or mutton, coconut milk and spices. The porridge is so flavourful and taste so delicious with some kind of pickle or pachadi. We usually enjoy it with this cucumber curry.

Traditionally this is served when breaking the fast. Since the porridge or gruel has rice, lentil, veggies and meat in them, it is a nutritious meal on its own.

Raw Rice - traditionally it is made with raw rice or even broken rice which is known as porridge rice is used. But you can use any rice of choice.

Moong Dal - a handful of moong dal or masoor dal adds texture and protein to the meal.

Onions - chopped onions is added in the porridge which adds aroma and flavour.

Vegetables - you can use carrot, beans, peas in this porridge to make it more nutritious.

Chicken - I used boneless chicken for this recipe which falls apart once cooked, you can use chicken keema or mutton mince.

Spices - whole spices is added for the aroma.

Coconut milk - coconut milk not only adds cream texture but gives flavour to this porridge.
