    Sweet and Sour Eggplants with step by step pictures. This recipe is prepared using eggplants and some sauces. It can be served over rice.

    Sweet and Sour Eggplants

    This is one recipe which was requested in my blog for quite a long time. Finally i made it few days back and it turned out good. I made this as a dry version. 

    About this Recipe

    It is made with eggplants and these eggplants are like sponges it absorbs what all flavours you add in. Just soaks and sucks it up. This chinese sauce was great with this amazing veggie.

    I have a serious addiction to chinese cuisine. And this is my latest addition to my recipe collections..It is simple to make and taste yum..Love this with fried rice or noodles. Taste so good.

    Ingredients for Sweet and Sour Eggplants

    • 1 large Eggplants
    • Oil to fry
    • 1 tablespoon Ginger finely chopped
    • 1tbsp Garlic finely chopped
    • 2 chopped Spring Onion White
    • ½ sliced Red Bell Pepper
    • Spring Onion Greens a handful chopped finely
    • 2 teaspoon Soy Sauce
    • 2 tablespoon Chilli Sauce
    • 2 teaspoon Vinegar
    • 1 teaspoon Chilli Powder
    • 1 tablespoon Sugar
    • Salt to taste
    • ¼ cup Water
    • 2 teaspoon Cornflour / Cornstarch
     
     

    How to Make Sweet and Sour Eggplants Recipe

    1. Slice eggplants into rounds and then slice them into strips. Heat oil in a pan, drop eggplant and fry till golden Remove them and set aside.
    2. Now mix all the sauce ingredients and set aside.
    3. Heat little oil in a pan, add in ginger, garlic, spring onion white and saute for a min.
    4. Add in red pepper and saute well. Add in sauce and cook till it get thick and glossy.
    5. Now add in eggplant and mix well. Cook them for few mins.
    6. Now add spring onion green and mix well.
    7. Spoon this into a bowl, top with sesame seeds and spring onion greens. Serve over rice.

    Ingredients
      

    • 1 large Eggplants
    • Oil to fry

    • Sesame Seeds for garnishing
    • For Sauce:
    • 2 teaspoon Soy Sauce
    • 2 tablespoon Chilli Sauce
    • 2 teaspoon Vinegar
    • 1 teaspoon Chilli Powder
    • 1 tablespoon Sugar
    • Salt to taste
    • ¼ cup Water
    • 2 teaspoon Cornflour / Cornstarch

    Sweet and Sour Eggplants Step by Step

     
    Wash your eggplant
    slice top off
    slice them into round
    take one
     
     
    Cut them in strips..if they are big, you can cut them in half
    these were small slices so i just cut them like this
    take them in a plate
    heat oil and add the eggplants in 
    toss and fry
    keep frying till it gets golden
    now it well fried and eggplants is cooked
    remove them and set aside..
    Take your sauce ingredients
    Take soy sauce in a bowl
    add in vinegar
    add chilli sauce
     water
    add salt
     chilli flakes or powder
    add in sugar
    and some cornflour
    mix well and set aside
    Prepare your other stuffs
    Heat little oil in pan, add in ginger, garlic and spring onion white
    fry for few mins
    add in sliced red bell peppers
    fry them for few mins
    add in sauce 
    mix well
    bring it to a boil and cook for few mins
    add in fried eggplant
    mix well
    cook till it thickens
    add in spring onion greens
    spoon this into a plate
    sprinkle with sesame seeds
    top with spring onion greens
    Serve with rice
