Cilantro Pesto (Pesto with a Twist)

 
Happy Saturday Guys!!!

Untill I came across this recipe,I thought pesto is a dish that can be made only with basil...And for your information that lovely herb is not available in my place.Unlucky me:(

Then one fineday I thought why can we make pesto with cilantro... YES...That herb is overflowing here... This sounds like a good idea..Immediately went in to action...

I rushed to the supermarket bought a healthy bunch of cilantro and nutty packet of almonds and some wonderful creamy parmesan cheese...Got everything on hand ,why are we waiting for...off we go.......

And forgot to mention the twist here..It’s GARLIC...Yes I love garlic in everything.Don’t you...If you don’t Be my guest...It really works...So why are you waiting still...Lets go...

And One more thing....This is to Tempt you...I already made a batch of Pizza,Pasta and Sandwich with this....Don't worry recipe will come soon..Ok No waiting more...Lets Go!!!

Ingrediants:

Cilantro / Coriander leaves-1 bunch
Olive oil- ¼ cup
Garlic-1 small clove
Parmesan-1/2 cup grated
Almonds / Badam-15 blanched
Onion- ¼ chopped
Salt to taste

Method:

To blanch almonds,Put almonds in hot water for 15 mins...After that take it press it...the peel comes of right away..

In a blender add cilantro,garlic,onion salt and pulse it for few times..

Add in almonds,cheese and pulse it till almonds gets broked up..

Add in olive oil in a steady stream with the blender on till it gets mixed in and everything looks blended well..

Tip this into a bowl and add in some more oil in this..Mix well ...

Store this in fridge for upto a week..You could use this for making pizza,pasta and many more...

Want to make Cilantro Pesto...Grab all this..

Take your fresh cilantro in a  blender

add in one clove of garlic...Remember only one not more than that...You don't want garlic all over you mouth..

Add in your onions..

Of course some seasoning...

Blend it up..

Throw in your blanched naked almonds...

And your lovely cheese...

Bliss it up...

Now comes the important part...Slowly add in your olive oil while the blender is still on..

All blended and looks inviting

Looks lovely...Smell even better....Ready to be enjoyed with some pasta or pizza...

Yes you can make pesto also with parsley:) If you mail me (my mail is on my blog) your address I will send you some seeds.You gotta try basil(and not only in pesto)and it is so easy to grow even indoors:)

I've never tried making pesto with cilantro but it is an herb I absolutely love. Sounds really delicious. Yummy!
