Spicy Grilled Chicken Salad Recipe - Chicken Salad with Thousand Island Dressing



I am not much of a salad person, but sometimes i really feel like having it. And i try to make my salad very special instead of having plain ol veggie salad. This is my new favourite fully loaded grilled chicken salad. I dont call this completely healthy because it has a dressing which is made with mayo. SO it is partly healthy but you know what, once in a while you need something like this to make you feel that the world is a better place.



This is my favourite delicious salad. Once you have this salad, you will never look at salads the sameway again. Because it is so good. It has peppers, grilled chicken, pineapples and some grilled bread, then the whole thing is topped with a delicious creamy thousand island dressing. I make my dressing from scratch , so take a look at that..

Preparation Time : 10 mins
Cooking Time : 15 mins
Serves: 1 to 2

Ingredients:

Lettuce - 1 bunch
Mixed Colour Capsicum / Bell Peppers - 1 cubed
Onion - 1 small sliced Very thinly
Chicken Breast - 1 large
Pineapple - 2 to 3 slices
Bread Slices or Baguette as needed
Thousand Island Dressing as needed (Recipe here)

For Marination:
Balsamic Vinegar or White Vinegar - 3 tblspn
Olive Oil - 2 tblspn
Oregano - 1 tsp
Red Chilli Flakes - 1 tsp
Salt to taste
Garlic - 1 large clove minced

Method:

Mix all the marination ingredients. place chicken breast in this and coat it on both sides. Now set aside for 10 mins.

Heat a grill pan on high heat. Brush it lightly with oil. Place chicken in the hot pan and let it cook for 5 to 6  mins on each side. While the chicken is cooking, in the leftover marinate place bell peppers in and toss well. Place it on grill pan and cook till it is grilled.

Once the chicken is done, remove the chicken to a board and let it rest. Place the pineapple and bread on the grill pan and let it toast.

Remove remove the pineapples to the board as well. Chop the chicken and pineapples.

Now assemble the salad, take a pretty place, place some lettuce leaves on it, Dot it with the grilled peppers, onions, pineapples, chicken and bread.

Top with the dressing generously and serve immediately.

Take all your ingredients
Take balsamic vinegar in a bowl..If you dont have that
 you can use lemon juice or normal vinegar
pour a good glug of it in
add minced garlic
add in salt and chilli flakes..I used chilli powder..
add in oregano
add little olive oil
mix well
marination done
place chicken in
coat on both sides well, let it sit for 10 to 15 mins
Now place the chicken in a heated grill pan and let it cook..dont touch it for few mins else you will never get the grill lines
Now in the leftover marinate
add in cubed tri colour peppers
toss well


place it around the chicken


once they are cooked on one side, flip them over


cook on other side till done


remove the chicken to a board and let it rest


now cut into slices


IN the same pan, grill pineapples and bread


done


remove it to the board


chop them up
Now take a pretty place


spread lettuce leaves


top with peppers


now top with sliced onions


now pineapples


now place chicken


place your bread


take your dressing..This is homemade thousand 
island dressing..Recipe here..


pour it in


Serve
