Chicken fry or fried chicken has been my all time favorite. Specially the street side south indian ones, Those crispy masala coated chicken which has a spicy exterior and a juicy interior, thinking of it makes my mouth water. I know it is not hygiene to buy them from those street side shops, the thing which concern me a lot is the oil which they use for frying them. I know they keep on frying in the same oil again and again. So i stopped buying them and started to make fried chicken at home.
would never say that fried chicken is healthy, but atleast when you make them
at home, specially with good quality sunflower oil available in the market, these would be a little on the safer
side. After all these kind of dishes are guilty pleasures right!

Preparation Time : 15 mins
Marinating Time : Overnight
Cooking Time : 45 mins
Serves: 5 to 6
For Frying Chicken:
Chicken – 1 kg with bones
Lemon Juice or Vinegar – 1/4 cup
Chilli Powder – 1 tblspn
Coriander Powder – 1 tblspn
Garam Masala Powder – 2 tsp
Turmeric Powder – 1 tsp
Salt to taste
Rice Flour – 1/2 cup
Oil for deep frying
Coriander Leaves – 1/2 cup chopped
Mint Leaves – 1/2 cup chopped
Curry leaves – a handful
Ginger – 3 tblspn
Garlic – 6 to 8 cloves
Grind all ingredients given to a smooth paste. Take chicken in a bowl, add all ingredients except oil and rice flour along with the ground masala and mix well. Leave to marinate for 3 to 4 hours or overnight.
Before frying, add rice flour and mix well. Now drop this in hot oil and fry till golden for 8 to 10 mins. Drain and set aside.
|Take coriander, mint and curry leaves in a blender|
|add ginger and garlic and puree fine|
|take chicken in a bowl|
|add salt and turmeric|
|add the ground masala|
|add lemon juice or vinegar|
|add chilli, coriander and garam masala powder|
|mix well..leave to marinate for 3 to 4 hours|
|now take it out|
|add rice flour|
|drop in hot oil|
|fry for 8 to 10 mins|
|now it is done..drain and serve|
