    About Pepper Mutton Gravy

Mutton Pepper Gravy or Pepper Mutton Curry, whichever way you call them. These are delicious spicy lamb curry which is made using plenty of onions, ginger, garlic, tomatoes and freshly roasted spices. Check my pepper mutton fry.

Mutton pepper Chettinad style taste fiery with rice, roti or pulao. This gravy is cooked in pressure cooker so it can be made in half the time. If you don't have pressure cooker, you can cook this in a casserole low and slow.

The addition of roasted pepper and fennel seeds powder in the end makes it fiery and tasty.

    Ingredients

    • Mutton - Use tender mutton (lamb) pieces for this dish. Depending on the age of your mutton, the cooking time will vary. So you can adjust the time accordingly.
    • Coconut Oil - I used coconut oil for my roasting process. You can use gingelly oil or for more aroma use ghee.
    • Onions & Tomatoes - sliced onions is cooked till golden, which adds colour. Tomatoes add slight tang which is perfect. You can use shallots instead of onions.
    • Ginger & Garlic - fresh ginger and garlic is crushed and used.
    • Tempering spices - cinnamon, fennel seeds, cardamom, cloves and curry leaves is used in the seasoning.
    • Spice powders - I used chilli powder, coriander, turmeric, cumin and garam masala powder.
    • Special Pepper Spice Mix - fennel seeds and black pepper is roasted and ground to make the special spice blend. It adds the unique taste which we love.

    Step by Step Pictures

    Special pepper spice mix

1)take black pepper and fennel seeds in a small pan.

2)Roast on low heat until it turns few shades darker and gets toasty aroma. take it off the heat and allow to cool completely.

3)Take it in a blender and grind into a coarse powder.

4)This is your special pepper mutton spice mix. It adds so much flavour to the dish. Set this aside till needed.

    Making Masala

5)heat coconut oil in a pressure cooker. Add in whole spices, I used fennel seeds, cardamom, cinnamon and cloves. Let the spices sizzle in the oil.

6)Add in sliced onions and saute for 3 to 4 minutes until lightly translucent.

7)Add in ginger garlic paste and cook for couple of minutes until raw smell leaves and gets aromatic.

8)Now add in tomatoes. Make sure to chop them roughly.

9)You have to cook the tomatoes until it gets slightly mushy.

10)Since this curry doesn't have coconut, you need to grind half of the sauted onion tomato mixture to a puree. This adds thickness to the curry.

11)Grind to a puree, don't add any water when grinding.

12)Now add the ground masala back into the remaining sauted onion tomato mix.

13)Add in spice powders. I have used chilli powder, coriander powder, turmeric, cumin and garam masala powder. Once spice powders are added, saute it for 2 to 3 minutes.

14)Add salt to taste and mix well.

    Cooking Mutton

15)Add in the mutton pieces into this masala. Toss to combine really well.

16)I like to stir fry this for at least 5 to 6 minutes so the mutton coats the curry really well.

17)Pour in little water to help cook the mutton. Don't add too much, may be 1 cup.

18)Cover and pressure cook for 5 to 6 whistle, reduce the flame to low and cook for 5 to 10 minutes. Turn off the heat and let the pressure release by itself.

Depending on your mutton texture, you need to cook longer.

    Making Pepper mutton gravy

19)Now the mutton is cooked and the curry is thick and creamy.

20)Now add in ground pepper and fennel seed mix and combine well.

21)Turn off the heat and add coriander leaves. Thats it mutton pepper gravy is ready to serve.
