)heat coconut oil in a pressure cooker. Add in whole spices, I used fennel seeds, cardamom, cinnamon and cloves. Let the spices sizzle in the oil.

)Add in sliced onions and saute for 3 to 4 minutes until lightly translucent.

)Add in ginger garlic paste and cook for couple of minutes until raw smell leaves and gets aromatic.

)Now add in tomatoes. Make sure to chop them roughly.

)You have to cook the tomatoes until it gets slightly mushy.

)Since this curry doesn't have coconut, you need to grind half of the sauted onion tomato mixture to a puree. This adds thickness to the curry.

)Grind to a puree, don't add any water when grinding.

)Now add the ground masala back into the remaining sauted onion tomato mix.

)Add in spice powders. I have used chilli powder, coriander powder, turmeric, cumin and garam masala powder. Once spice powders are added, saute it for 2 to 3 minutes.

)Add salt to taste and mix well.

Cooking Mutton
)Add in the mutton pieces into this masala. Toss to combine really well.

)I like to stir fry this for at least 5 to 6 minutes so the mutton coats the curry really well.

)Pour in little water to help cook the mutton. Don't add too much, may be 1 cup.

)Cover and pressure cook for 5 to 6 whistle, reduce the flame to low and cook for 5 to 10 minutes. Turn off the heat and let the pressure release by itself.
