Just wanted to try a low fat cake for a long time and this is the perfect recipe. This recipe is made using whole wheat flour and is so basic and simple.

    About Upside Down Apple Cake

Apple upside-down cake is a cake that is baked in a single pan upside- down,; with the toppings at the bottom. When the finished upside- down preparation is removed from the oven, it is flipped over and de-panned onto a serving plate, righting it and serving it right-side up.

Before the batter is poured in, sliced apples is usually placed on the bottom of the pan and batter is topped and baked. This cake is made by pouring cake batter over apples which is layed over brown sugar and butter. Then pour the easy peasy blender batter and baked. After baking, it is flipped onto a platter so that the bottom becomes the top. Hence the name Apple upside down cake.

I have shared an upside down apple cake few years back and this version is an updated recipe for the original recipe. It is my latest favorite and better than the old version.

The recipe is very straight forward. The batter is literally made in a blender. All you have to do is blend the ingredients until creamy and pour over wheat flour and fold using spatula.

Even the base caramel sauce is a no cook version. All I did was layer butter and brown sugar in a square cake pan. Arranged thinly sliced apples over the sugar. Batter is then poured on top and baked. Thats it.

    Ingredients

Apples - Use freshest of the apples, it not only adds taste but gives wonderful apple flavour.

No Cook Caramel - The base caramel sauce is a no cook version. All I did was layer butter and brown sugar in a square cake pan.

For Batter - eggs, sugar, raising agents, oil, milk, cinnamon, is added in a blender and combined till creamy.

Wheat flour - I used whole wheat flour for making the cake batter. But you can use plain flour as well.

    Expert Tips

    • Make sure to peel the apples and slice them thinly so the apples cook by the time the cake is baked.
    • Whole wheat flour is used in the sponge, you can use plain flour too.
    • You can reduce the sugar added in the cake batter to ½ cup as well.
    • Instead of oil you can use melted butter.
    • Cinnamon is optional, you can skip it.

6)Now lay the sliced apples on top of the brown sugar evenly. Set this aside.

7)Now in a blender add in eggs, sugar, oil, milk, vanilla, baking powder, baking soda, cinnamon and salt.

8)Blend this for 20 to 30 seconds until it is combined.

9)Take wheat flour in a bowl, pour the blender egg mixture into the wheat flour.

10)and fold gently until the batter is just combined.

11)Now take your apple lined baking tray, pour the prepared batter over the apples.

12)Immediately place the cake pan into the oven and bake for 30 minutes until it is cooked.

13)Remove the cake pan from oven, let it cool for 10 minutes. Now invert the cake pan on a serving plate. Allow it to cool down more, slice and serve.
