    Rice Pilaf

    Hai Friends Hope you all enjoying ur weekends. Today I am in a mood of baking cookies, so I have planned to bake Oreo Chocolate Chip cookies and M&M Cookies. Very Tempting Right.

    Now coming back to todays recipe. This is a simple quick pilaf. It is a very flavourful rice preparation. This recipe is modified from “Anjum Anand’s I Love Curry” Cookbook.

    Ingredients for Rice Pilaf

    • Basmati rice-1 cup
    • Onion-1 sliced
    • Cinnamon / Pattai-1 inch piece
    • Cloves / Krambu-4
    • Cardamom / Yelakai-4
    • Pepper-1 tsp
    • Bay leaves / Brinji ilai-1
    • Salt to taste
    • Ghee-2 tblspn
    • Coriander leaves / Cilantro for garnishing

    Rice Pilaf Preparation

    1. Wash rice in lots of water and soak it for 30 min.Drain and set aside.
    2. In a thick bottom pan add ghee and heat it up.
    3. Add in cloves, cardamom, bay leaf, pepper, cinnamon and fry for 30 sec.
    4. Throw in onions and cook till golden.
    5. Add in the rice and fry for 2 min.
    6. Pour in 2 cups of water and bring that to boil.Once it started boiling cover it with a tight fitting lid and let it cook on a very low flame for 10-15 mins.
    7. Once it has absorbed all the water, fluff it with a fork and let it stand for 10 min covered.
    8. Throw in lots of coriander and mix well.
    9. Serve hot with any curry.
