Aromatic Rice Pilaf

Rice Pilaf with Goan Chicken Curry
Hai Friends Hope you all enjoying ur weekends..Today I am in a mood of baking cookies,so I have planned to bake Oreo Chocolate Chip cookies and M&M Cookies..Very Tempting Right..I will let you know how it turned out..Coming back to Blogging Marathan..BM Group 1 came to an end..From today onwards I am gonna do BM Group 2 the theme is “Cooking from a Cookbook”…Before going to the recipe I like to show you my cookbook collections..I have recently started collecting cookbook and I have quite a few cookbooks(Click this)..

Now coming back to todays recipe..This is a simple quick pilaf..It is a very flavourful rice preparation..This recipe is modified from “Anjum Anand’s I Love Curry” Cookbook..You could buy this book from here or here..

Ingrediants:
Basmati rice-1 cup
Onion-1 sliced
Cinnamon / Pattai-1 inch piece
Cloves / Krambu-4
Cardamom / Yelakai-4
Pepper-1 tsp
Bay leaves / Brinji ilai-1
Salt to taste
Ghee-2 tblspn
Coriander leaves / Cilantro for garnishing
Method:
Wash rice in lots of water and soak it for 30 min.Drain and set aside.
In a thick bottom pan add ghee and heat it up.
Add in cloves,cardamom,bay leaf,pepper,cinnamon and fry for 30 sec.
Throw in onions and cook till golden.
Add in the rice and fry for 2 min.
Pour in 2 cups of water and bring that to boil.Once it started boiling cover it with a tight fitting lid and let it cook on a very low flame for 10-15 mins.
Once it has absorbed all the water,fluff it with a fork and let it stand for 10 min covered.
Throw in lots of coriander and mix well.
Serve hot with any curry..

Crackle whole spices in ghee

cook till golden brown
add in soaked rice
pour in water
bring to a good boil
cook it
DONE
