This has become my latest addiction. It is super healthy and makes a great breakfast. Since you can make it in advance, it comes handy in the morning.

I usually add some almond milk in this recipe since I liked it so much. If you want to add soy milk, almond milk, oat milk or regular milk or just water you can go ahead and use that too.
About Chia Seed Pudding
Chia pudding is one of the most easiest dessert you could make. Even though it requires few steps and process, it is very easy to make.
Chia pudding can be customised as per your liking. You could add coconut milk or regular milk in this. You could even add any sweetener like honey, maple syrup or sugar. Using fruits which are too sweet you can even skip adding sugar in this.
You can make this a day in advance and serve it the next day. You can serve it combined, or layer chia pudding with fruits and make it more appealing.

Chia seeds - Chia seeds have a mild, nutty flavour that complements both sweet and savoury dishes well. They have a very subtle flavour, though some compare it to a poppy seed or an alfalfa sprout. The dry chia seed has a crunchy and dense texture when raw.
Milk of Choice - Chia pudding can be made with variety of milk. Regular milk, oat milk, almond milk or soy milk can be used.
Fresh Fruits (optional)- Any fruits like mango, banana, strawberries, blueberries can be used.

Expert Tips
1)Consistency is everything! You can get an idea about the amount of chia to milk once you start making it. Some people like their chia pudding soupy and some like it super thick. So add milk according to your preference.
2)Overnight for best texture. I like to make my chia pudding a day in advance. Mix and store in a covered container in fridge overnight.
3)Mix everything. The key to get a creamy chia pudding is to mix the chia seed really well. I like to come inbetween and give everything a good mix.
4)Make ahead & Meal Prep. Chia pudding is a best breakfast meal prep option. You can make a big batch and store in fridge. In the morning, remove as much pudding as you need, top with fresh fruits and nuts and enjoy your healthy breakfast.

Step by Step Pictures
1)Take all your ingredients. For making chia pudding you need basically these ingredients. You need milk of your choice, chia seeds, sweetener of choice and vanilla extract which is optional.

2)Take milk in a jug. Instead of mixing in a separate jug. You can take a mason jar or any serving jar and mix the whole thing there.
I used regular milk, but almond milk, soy milk or oat milk.

4)Add vanilla extract (optional) and maple syrup. Instead of maple syrup, sugar, honey or agave can be used.

5)I used a whisk to combine milk with maple syrup.

6)Add chia seeds. For every 1 cup of milk you need ¼ cup of chia seeds.

7)Mix the chia seeds with the milk so it combines evenly. Now allow the chia seeds to soak in milk for minimum 30 minutes. You can come in between and mix the chia seeds with milk for even absorbtion.

8)Place this bowl in fridge covered and let it rest. Leave overnight to thicken by which time the chia seeds would have absorbed all the milk and thickened like a pudding.

11)Spoon into serving bowl and top with nuts, dried fruits, fruits of choice and serve cold.

Variations
1)Blueberry Chia Pudding - Mix ¼ cup chia seeds, 1 cup milk and mix well. Soak for 30 mins.Spoon this into a bowl. Top with honey, blueberries and pumpkin seeds. Serve cold.
2)Strawberry Chia Pudding - Mix chia seeds, milk, maple syrup and soak for 30 mins. Mix 1 tablespoon sugar with 1 cup chopped strawberries. Take a serving glass. Spoon chia on top and strawberries. Serve cold.
3)Chocolate Peanut Butter Chia Pudding - Mix together 1 cup milk, 3 tablespoon peanut butter, 3 tablespoon chia seeds, 1 tablespoon cocoa powder, 2 tablespoon maple syrup. Set in fridge for 1 hour. Top with sliced bananas and serve cold.
4)Coconut Chia Pudding- Mix 1 cup coconut milk, 3 tablespoon chia seeds and 2 tablespoon maple syrup. Set aside in fridge for 1 hour. Top with chopped pistachios and shredded coconut. Serve immediately.
5)Avocado Chia Pudding - Take 1 avocado, 1 cup milk and ¼ cup honey in a blender and puree till smooth. Add 3 tablespoon chia seeds and mix well. Place in fridge for 1 hour. Serve immediately.
6)Overnight Chocolate Chia Seed Pudding - Mix together 1 cup almond milk, ¼ cup chia seeds, 3 tablespoon cocoa, 3 tablespoon agave, ½ teaspoon vanilla, a pinch of salt. Place in fridge for 2 hours or overnight. Serve with any fruits or nuts.

Chia Seed Pudding Recipe (Easy and Healthy Chia Pudding)
Equipment
Ingredients
- 1 cup Milk of Your Choice (Coconut, Almond, Soy or any Plant Based Milk)
- 2 tablespoon Sweetener of Choice (Sugar, Maple Syrup, Honey or Agave Nectar)
- ¼ cup Chia Seeds
- 1 teaspoon Vanilla extract
- 2 tablespoon Nuts of your choice (almonds, pistachios, cashews)
- ½ cup Fruits of your choice (banana, strawberries, blueberries)
Instructions
- Mix all the ingredients in a bowl except nuts and fruits. Place the bowl covered in fridge for 30 mins to 1 hour.
- Spoon into individual serving bowl and top with nuts and fruits.
- Serve cold.
Notes
- If you feel your pudding is too thick you can add a splash of milk to thin it out.
- You can layer this pudding with fresh fruits.
- Chia pudding can be stored in fridge for upto 3 to 4 days.
