    Vegetable cutlet with step by step pictures. This delicious veg cutlets taste amazing with tomato ketchup.

    I love these crispy morsels, i have already shared a version of veg cutlets in my blog already. But i have my aunt(you must be familiar with her through my pooran poli post) who makes the perfect crispy veg cutlets. I have been asking her for the recipes.

    Couple days back she came to my mom's place, and luckily i was there. And i looked in the fridge and thank god i had all the veggies and ingredients. So i asked her can we make it now. She agreed and we made it, i clicked all the pictures and it tasted just fantastic. I don't want to delay the recipe, since it is ramzan season and this makes a great iftar recipe.

    Hope you will give this a try and let me know how it turns out for you.

    How to Make Veg Cutlets

    1. Boil vegetables
    2. Boil and mash potatoes
    3. Saute onions with spices.
    4. Add in vegetables and potatoes
    5. Mix and mash well.
    6. Shape it into patties.
    7. Coat in egg and then in breadcrumbs
    8. Refrigerate for 30 mins to 1 hour.
    9. Shallow fry in oil till golden on both sides.
    10. Drain and serve with ketchup.

    Ingredients

    • Oil - 1 tblspn + for deep frying
    • Onion - 1 large chopped finely
    • Green chilli - 2 chopped finely
    • Ginger Garlic Paste - 1 tblspn
    • Turmeric Powder - 1 tsp
    • Carrot - 1 large chopped finely
    • Beans - 10 chopped finely
    • Salt to taste
    • Chilli Powder - 1 tsp
    • Tomato Ketchup - 1 tblspn
    • Breadcrumbs - ½ cup
    • Garam masala powder - 1 tsp
    • Coriander leaves - 3 tblspn finely chopped
    • Potatoes - 2 large boiled peeled and mashed
    • For Coating:
    • All Purpose Flour / Maida - ¼ cup
    • Breadcrumbs - 2 cups

    Instructions

    • Heat oil in a pan, add in onions, green chillies, ginger garlic paste and cook for a min or so.
    • Add in turmeric powder and mix well.
    • Add in veggies and mix well. Add in some salt and a splash of water and cook for 3 to 4 mins.
    • Add in chilli powder and mix well. Add in potatoes, ketchup, breadcrumbs, salt and mix well.
    • Add in coriander leaves and garam masala powder. Mix well.Now set this aside so it cools a bit.
    • Take small portions from this and roll it into ball, flatten it slightly and set aside.
    • Take all purpose flour in a bowl, add water and make it into a thin liquid. Now take breadcrumbs in a bowl.
    • Take cutlet and coat with the flour coating and then the breadcrumbs. Once it is well coated, drop in hot oil and fry till crispy.
    • Drain and serve with ketchup.

    Version 1: Bakery Veg Cutlet Step by Step

    Take all your ingredients

     

    heat little oil in a kadai

     

    add onions and green chillies

     

    add ginger garlic paste

     

    turmeric and mix well

     

    once it is cooked

     

    add chopped veggies

     

    add salt

     

    some water

     

    cook that till veggies are done

     

    now it is almost cooked

     

    add chilli powder

     

    add boiled and mashed potatoes

     

    ketchup

     

    add some garam masala powder

     

    sprinkle over some breadcrumbs

     

    add in coriander leaves

     

    mix well

     

    This is my perimma, expert in traditional cooking. This is her recipe

     

    once the mix is cool enough to handle. roll it into balls

     

    like this

     

    take all purpose flour

     

    add water and mix well to form a runny paste

     

    dip the cutlets in this

     

    coat in breadcrumbs

     

    coat it well

    drop in hot oil and deep fry

    Version 2: Healthy Version Vegetable Cutlet Recipe

    Everyone loves a crispy hot cutlet serve with a dollop of ketchup on the side. There is nothing more satisfying that a crispy cutlet for evening snack.Ok I have two recipes today as I promised. I am gonna start the new summer special recipes with an Antioxidant salad check that out. Ok todays recipe is Vegetable Cutlet. Cutlet is everyone's favorite dish. Cutlet can be made with Chicken, Mutton or Even fish.

    But this vegetable cutlet is so simple but it takes a little bit of time to prepare everything. I everything is done you can easily make it. In fact you could make the cutlet as mentioned before and freeze it and you can use it whenever you want, It stays good up to 2 weeks in the freezer.The main thing about this cutlet is you want the vegetables to be very finely chopped. Steam the vegetables first and squeeze of any extra water from it. This cutlet mixture should be dry so that you can get a perfect cutlet. So make vegetable cutlet this weekend and tell me how it came.

    Ingredients

    • Potato-3 boiled and mashed
    • Onion-1 chopped finely
    • Mixed Vegetables Carrot,Beans,Peas,Cabbage-2 cups chopped finely and boiled
    • Red chilli powder-1 tblspn
    • Coriander powder -1 tblspn
    • Cumin powder -1 tsp
    • Garam masala pdr-1 tsp
    • Green chilli-2 chopped
    • Ginger garlic paste-1tblpsn
    • Coriander leaves-1 cup
    • Egg-2
    • Bread crumbs-1 cup
    • Oil-1 tblspn+for frying
    • Salt-to taste
    • Lemon juice-1 tblspn

    Instructions

    • In a kadai add oil,Ginger garlic paste and green chilli and mix well.Now add in the onions and cook for 2 min.
    • Add in all the spice powder and mix well.Season with salt and mix well.Now throw in the boiled vegetables and mix well.Cook for 2 min.Tip this into a bowl.
    • Add in the mashed potatoes,coriander leaves and stir well.Squeeze a little bit of lemon juice and combine everything well.
    • Form small pattice from this and arrange it in a plate and set it aside.
    • In a shallow bowl beat eggs with little salt,and in another one plate spread the breadcrumbs and keep this aside.
    • Now take a pattice and first dip this in beaten egg and then in breadcrumbs and keep this in a plate.
    • Refrigerate this for 30 min,so that the breadcrumbs stick to the pattice.
    • Heat oil for shallow frying in a pan.When it is hot place the pattice carefully in the oil and fry till golden brown on both sides.
    • Drain this in a paper towel and serve hot with Tomato Ketchup

    Notes

    1)If the mixture is too wet add a little bit of breadcrumbs to it and mix well.
    2)For complete vegetarian option,Mix a little maida with some water to form a thin paste.and then dip the cutlets in this instead of eggs.

    1)Prepare all your ingredients. Gather it together. So cooking will be easy.
     
     

    2)I chop all my vegetables very fine. I use carrots, cabbage, beans, peas and cauliflower. You can use broccoli as well. I pre cooked all the vegetables in microwave. you can cook them separately.

     

    3)In a kadai add oil,Ginger garlic paste and green chilli and mix well.Now add in the onions and cook for 2 min.

     

    4)Ad in spice powders

     

    5)Add spices

    More spice powders

    6)Mix well

    mix well

    7)add the cooked veggies

     

    8)Mix well

     

    9)Take mashed potatoes in a bowl

     

    20)Add vegetable mix and coriander leaves

     

    21)Add lemon juice if needed

     

    22)Mix well

     

    23)Form small pattice from this and arrange it in a plate and set it aside.

     

    24)In a shallow bowl beat eggs with little salt,and in another one plate spread the breadcrumbs and keep this aside.
    Now take a pattice and first dip this in beaten egg and then in breadcrumbs and keep this in a plate.

     

    25)Coat in breadcrumbs

     

    26)Coat it well

     

    27)Refrigerate this for 30 min,so that the breadcrumbs stick to the pattice.

     

    28)Heat oil for shallow frying in a pan.When it is hot place the pattice carefully in the oil and fry till golden brown on both sides.

     

    29)Flip over and cook

     

    30)Drain this in a paper towel and serve hot with Tomato Ketchup
