Barbeque Chicken with Indian Twist

Couple weeks back i posted pictures about our grilling night in facebook. I got so many request to post the barbeque chicken recipe from my viewers. So here i am with the post.We set up a traditional barbeque using bricks and woods..It was so fun we totally enjoyed the day. I used my own twist on the barbeque, i added so many indian spices and made my own barbeque sauce too..Try it and let me know how it turned out.

Preparation Time : 10 mins
Resting Time : 8 hours or overnight
Cooking Time : 1 hour to 1.5 hours

Ingredients:

Chicken – 1 whole chicken cut into 4 pieces ( You can do 8 pieces)

For Marination:
Olive Oil – 6 tblspn
Lemon Juice – 3 tblspn
Oregano – 1 tspn
Ginger, Garlic – 2 tblspn Minced
Garam Masala Powder – 1 tblspn
Chilli powder – 2 tsp
Turmeric powder – 1 tsp
Salt to taste
Pepper – 1 tblspn


For Barbeque Sauce:
Butter – 50 gms Melted
Tomato ketchup – 1/4 cup
Vinegar – 2 tblspn
Ginger, Garlic  – 1 tblspn
Oregano – 1 tsp
Mustard Sauce – 1 tblspn
Salt to taste
Sugar – 1 tblspn
Chilli flakes – 1 tblspn
Cumin Powder – 2 tsp
Cilantro / Coriander leaves – 3 tblspn finely chopped


Method:

Take the marinate ingredients in a bowl and mix well. 

Take the cleaned chicken pieces and make slashes in it.

Pour the marinate over the chicken and let it sit for 8 hours or overnight in fridge.

Now make the sauce. Mix all the ingredients given in the sauce list.

Now heat the barbeque, You can make it in oven too(Check notes). Place the chicken over the rack and grill it on both sides till they are half cooked.

Brush with the barbeque sauce on both sides till they are completely cooked.

Remove this and serve with naan.


Notes:

You can make the chicken in oven too.

Preheat the oven to 200 Degree C / 400 Degree F. Place the marinated chicken in a foiled lined tray and cook for 30 mins, now flip the chicken and cook for 30 more mins.

Now drain the excess juice from the tray.

Now turn the oven to  250 Degree C / 500 Degree F. Brush the chicken with barbeque sauce and cook for 20 more mins. Flip the chicken over and brush with some more barbeque sauce and grill for 20 more mins.

Pictorial:
For marination you need, olive oil, ginger, garlic, lemon,
oregano,garam masala,chilli,
turmeric,salt, pepper.
Take olive oil in a bowl
add in some lemon juice
along with some oregano
add in some ginger garlic paste
Add in spice powders and salt
and mix well
marinate done
Pour it over the chicken and marinate overnight
For Sauce..You will need.
Mustard, Oregano, Vinegar, Ketchup,
Ginger, Garlic, Salt, Sugar, Chilli flakes, Cumin,
Butter and Cilantro
Take melted butter in a bowl
add in spices, sugar and salt
add in ginger and garlic
and some ketchup
add in some mustard
add in cilantro
and some oregano..
and some water
Mix everything up
till mixed
Now start grilling your chicken
Look the grilling master
grill the chicken till they are cooked
Brush both side of the chicken with the sauce
I also made some tandoori chicken and rustic naan..

    Hi Aarthi,

    We had a barbecue party at home yesterday and I made the sauce the way you've described it… and it was a hittttt!!! everyone loved it, one of the guest thought it was peri-peri sauce.. lol and was surprised that it was home made. Thank you.
