I used a plain eggless chocolate sponge cake recipe and then layered it with some canner cherries, whipped cream. I didn’t go for the chocolate topping. But you can decorate this cake as you wish..

Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Baking Time : 25 to 30 mins
Makes one 3 layered 7 inch round cake

Ingredients:

For Cake:
All Purpose Flour / Maida – 2 cup / 240 grams
Sugar – 1 cup / 200 grams
Cocoa Powder – 6 tblspn
Oil – 1/2 cup / 120 ml
Water – 11/2 cup / 360 ml
Cornflour / Cornstarch – 4 tblspn
Salt – 1/2 tsp
Baking Soda / Cooking Soda – 1 tsp
Vanilla Essence – 2 tsp
Vinegar – 2 tblspn

For Decorating:
Whipped Cream as needed (RECIPE HERE)
Cherries – 1 cup chopped + few whole for topping
Syrup that comes with cherry as needed for soaking cake
Chocolate Curls and Shaving as needed

Method:

Preheat oven to 180 degree C.

Take three 7 inch round pans and grease them well with oil, now dust them with flour and coat them on all sides. Remove the excess.

Take flour, cocoa, cornflour, baking soda and salt in a sifter and sieve them well.

Take oil, water, vanilla, vinegar, sugar  in a large bowl and mix well.

Add in sifted dry ingredients and mix well.

Divide this into the prepared pans and pop it in the oven in center rack.

Bake for 15 to 17 mins.

Insert a toothpick to see whether the cake is done, if it comes clean then the cake is cooked.

Remove it and let it cool down for 15 mins.

Now invert it and cool completely.

Now Place a cake on the stand, brush the top with some cherry syrup, spread some whipped cream over it, spread cherries over it, Place another cake and repeat this till the last cake.

Now cover the entire cake with cream.

Chill the cake for 2 to 3 hours.

Slice and enjoy.

Can you tell me what cream is that? Is it just Amul fresh cream which has been beaten well? How to get that thickness? I felt my cream will be runny, so cant assemble the cake.

Hi aarthi, One quick question, If I bake the cake one day earlier will it be dry for the next day? Let me know how I should go ahead so that the cake stays moist.

I made this cake today and it turned out simply awesome! I am amazed at myself 🙂

Thank you for all the tips. The basic chocolate cake was simply superb. As I did not have two same pans, I just baked in one Pyrex bowl, and made the cake 4 inches high, and sliced it horizontally.

If we just follow every step in this recipe and read carefully, it will surely turn out superb!
